Do you know why I love minced meat?! They are so versatile and gets cooked easily. Throw in some simple ingredients and you are good to go. This easy filling which I made is very delicious and can have by its own, or side to any other bread or even rice.

When I asked hubby to get spring roll sheet,he bought a bunch of lavash. I wanna use up those, hence decided to try this way. It didn’t go wrong. light crispy exterior and flavorful and juicy meat paired very well. You can also use your Home made pastry leaves  or Store bought spring roll sheet. Making simple Crepes and fill this minced meat masala would be great idea too. Make a big batch and freeze it…Isn’t that so cool?!

If you are not in a mood to make rolls with minced meat you have in your freezer, why don’t you try Meat balls in white creamy sauce or you want something Indianish?! Here is Kheema Dhal recipe which is very delicious! Lahmajoon would be another best option too!!!

This is my first ever post for MFB monthly challenge and the theme is “Ramadan memories”. Thank you so much Rafeeda letting me know about this group and events!! I would have chosen something with plantain as ramadan’s most memorable snack, but unfortunately I can only dream of preparing plantain snacks here 🙁 , plantain not available here.Then came to my mind was famous and very own Malabar snack – Chatti pathiri. We make it both sweet and Savory versions. For sometimes I was thinking to make sweet chatti pathiri with a twist to usual egg filling. And finally here it is – Layered with apple and recotta/farmers cheese.

In malabar which Iftar table will pass without chatti pathiri atleast once?!They can be prepared easily and very filling too. And this version of mine was absolutely delicious. Apple and recotta with hint of cinnamon really paired well! And those ghee fried cashew gave our kerala touch. You just need to prepare the filing and crepe, then layer and cook in very low flame!! Sweet chatti pathiri with apple and cheese (Attipathil/ chatti pathil)

Fatayers are famous middle eastern snacks prepared with pizza dough filled with different delicious fillings. Meat, spinach and cheese fillings are commonly used. As promised here is my fatayer recipe.I have made Spinach and feta combination and it became our favorite filling now for fatayer.Spinach and feta fatayer (Middle eastern triangle pie)

By making all lots of non veg items for Iftar, I thought of giving a vegetarian touch to my Iftar table. Vegetarian savory dishes pop up very rarely during this month here. So I thought spinach is by all means a healthy choice.Spinach filling paired very well with my Homemade Pizza Dough as well. Hubby is not a Pizza fan, but this little spinach triangle pie disappeared easily from here.

Addition of feta cheese really took the taste to the next level, those toasted walnuts added the crunch.These are not loaded with spices, so it was very comforting savory snack for Iftar!!

After my third attempt, I got those pies unopened after baking!! It’s really very important to squeeze out the moisture from the spinach and make it dry. Otherwise by the time your pies are baked … all those naughty little ones would have opened… haha….I was able to eat those…but were not good enough to present in front of you guys ;). Do you know I was waiting near the oven very curiously to see whether they are being naughty again!!! Childishness in me came out when I made this. So squeeze spinach as hard as possible….. it will be a stress buster exercise tooo ;-). Don’t worry, follow exactly all steps as given…You can also make half-moon shaped pies, that would be really easy in fact, you can follow the steps here. Serves ; 20 to 24 Fatayer


Ingredients :-

  1. Pizza Dough
  2. Spinach – 2 cup chopped
  3. Oil – 2 tea spoon
  4. Onion – 1 small
  5. Garlic – 2 cloves
  6. Parsley – 2 table spoon chopped
  7. Chilli powder – 1/4 tea spoon
  8. Cumin powder – 1/4 tea spoon
  9. Walnut – 1/4 cup chopped
  10. Feta cheese – 100 g (3/4 cup  crumbled)
  11. Salt & pepper – to taste
  12. Egg – 1 small (for egg wash)

Direction :- Spinach and feta fatayer (Middle eastern triangle pie)

  1. Prepare the  Pizza Dough and keep it ready or you can use store-bought as well.
  2. Add little salt to chopped spinach and keep aside for 10 to 15 minutes. Then take the spinach in muslin cloth and squeeze out the water from it.
  3. In pan add chopped walnut and dry roast until just it changes color slightly.
  4. Heat oil in the same pan, add chopped onion and grated garlic, saute until onion became translucent.
  5. In a bowl add spinach,sauted onion,parsley,cumin,chilli and mix well.
  6. Then add in crumbled feta cheese and walnut. Add salt and pepper to taste (remember you already added salt in spinach, so add if only require).
  7. Preheat your oven at 180 ° C.
  8. Now roll the pizza dough about 1/8 inch thickness and cut using around 4 inch diameter cutter. (Please keep unrolled dough close with kitchen towel to prevent from drying out)
  9. Now add 1 tea spoon filling at the centre of the cut dough (make sure not to touch the filling on the sides where you gonna punch together. If your filling touches the edges it will be difficult to stick together and will open up while baking).
  10. Now bring together two sides of the dough until centre and take third portion and pinch towards centre. You will get a triangle shape as in the picture.Close them and punch them firmly and well. Repeat the process with rest of the filling and dough.
  11. Place prepared fatayer on baking sheet.
  12. Beat the egg with a tea spoon water, brush it evenly on top of prepared fatayer (Egg wash gives shining and nice golden color).
  13. Bake it in the preheated oven for about 20 minutes until bottoms are lightly golden color. Then turn the grill/broiler mode and keep for 3 to 4 minutes just to get the golden brown color.(don’t keep more, it may tend to burn).
  14. Serve hot.

Tips & Tricks :-

  • It’s really very important to squeeze out excess moisture from the spinach.

Crepes are so versatile, pair very well with both sweet and savory fillings. One of my very easy to go breakfast item is crepe filled with anything which I have handy. Doesn’t it make so relaxing & happy when you make something quick and delicious serve it on the breakfast table?? Believe me this chocolate crepe filled with cream and fruits are really heavenly combo and very filling too.

Batter will be ready in no time and it takes less than a minute to assemble. The dulce de leche and clotted cream will simply melt in you mouth, and strawberry and banana enhance the taste with all its goodness. Furthermore all those pair well with chocolate crepe….yummmmm!

I would say this can be served as a dessert item too or when your loved one comes with hungry anytime of the day!!Add your favorite combination of seasonal fruits….a good way to include fruits in you breakfast too.Make big or small crepes as you prefer and serve it with a cup of coffee or tea.

How do you like to go for grocery shopping?? Me….like to go alone,without hubby accompanying me!! Especially when going to farmers market. I love to roam around looking each and every items – simply enjoy bargaining 😉 and seeing competition among the fellow farmers. And now he is happy that I don’t bother him for buying groceries and I am the happiest he is not coming with me to make hurry burry grocery shopping!

Last week when I went to buy vegetables, the lady from whom I usually buy root veggies, she took out one small packet of freshly harvested baby potatoes and showed to me. It was soooo fresh and cute,even there were no skin on it, first time I was seeing such fresh potatoes and I couldn’t resist buying that. They were not displaying it, only giving to the people who is coming and asking for it. Lovely lady showed it to me, since last couple of times I was getting root veggies from her.

I was so excited to cook those and started thinking what to make with those cuties from there itself. I don’t want to load them with all lots of spices. First thought of boiling and having with salt and pepper, finally enhanced it with garlic butter. Those pan seared babies, Dipping in source cream was soooooo delicious and finger licking.

This is a simple recipe, makes excellent snack or a side for your dinner. Not soo fancy, yet delicious, you can put together easily and loved by kids and elders alike.

Healthy Gingernut Biscuits

How happy I am when I get those goodies out of the oven and the heavenly aroma that just leave all around home!! If you are a home baker, you would also enjoyed those bliss whenever you bake something delicious!!! These are the easiest and healthiest biscuits I have ever made, and they are tasty too!!! These British biscuits really reminded me of that ginger candy we all had during our childhood. After having these biscuits you will get that slight burn of ginger in your throat…. how relaxing and delicious treat it was when we enjoyed this biscuits by dunking in a hot cup of milk tea.

Hey, this biscuits are made flourless, no butter/oil, refined sugar free and no eggs too…and they are healthy and delicious!! Richness of those ground cashew, nutty coconut, spiced with ginger and sweetened with honey, and zest of lemon really enhanced the flavour and you can whip this up in no time. For a Vegan version of biscuit use maple syrup instead of honey.

I couldn’t stop munching these simple beauty and before hubby comes in I finished half of it. Called him up and asked to get some more cashew to make next batch ;). These are really crunchy biscuits and they will become crunchier as it sits. When I took this next day for morning tea it was crunchier than how it was on previous day (day I baked). For me it is an expensive cookie, because cashew nut are little more expensive here compare to other nuts. I have to get lots of cashew when I come back from home next time :).

Kayi Ada/Unna Kaya (Stuffed Plantain-Fried)

Here is one of my all time favorite recipe for you. I love love and love anything with plantain. Kayi Ada/Unna kaya is one of the most popular snacks of Malabar. This delicious snack will be there on all occasions. Without Kayi ada and Erachi Ada (Malabar style Meat Pockets) no snack platters of Malabarians especially Kannur side will complete. These are king and queen of snacks of Malabar ;). This is one among the easiest ,yet delicious melt in your mouth snacks.

Sadly we won’t get this delicious and my favourite plantain here :(. I have to wait for vacation to indulge in this sweet beauty. These Kayi ada pictures I took when went home last December, and now I have to satisfy my self by seeing the pictures ;(.

Mashed plantains are stuffed with sweet filling, either coconuts or eggs, or else by mixing both eggs and coconuts. Both the ways it is yummilicious. Fried cashew nuts and raisins gives little crunchy and chewy texture.Dash of cardamom powder and ghee (clarified butter) gives mouthwatering aroma. How can someone not love this simple and delicious combo?!

Savory Chatti Pathiri (Atti Pathiri/Atti Pathal)

Here is another famous and delicious Malabar snack – Chatti Pathiri/Atti pathal/Atti pathiri. This yummy snack hold its place on Iftar table and other festival parties or simply as evening snacks. This Malabar delicacy made in both sweet and savory versions.  By its look, chatti pathiri is very similar to Italian Lasagna. Crepes are  layered with meat fillings and cooked in lowest flame or baked in the oven.

Since my hubby loves savory snacks for Iftar, I prefer to make Malabar savory snacks for him. Chatti pathiri is very filling and you can also make this as a dinner item. Filling can be made ahead of time and making crepe and assembling can be done simultaneously on the day you prepare Chatti pathiri.

Preparation is little bit lengthy process but delicious treat is assured at the end. Filling can be done as you desire, I made filling with chicken in authentic north Malabar style.

Lahmacun / Lahmajoon

Lahmajun/ lahmacun (Turkish pizza)

Lahmacun/Lahmajun is a thin round crust topped with spiced minced meat masala and baked to the perfection. This is also known as “Turkish Pizza”. It’s a very popular turkish/Armenian/Middle Eastern dish.

One of our favorite menu item in turkish restaurant here in Tashkent. While ordering food, we never used to think twice to order this exotic dish. I always wanted to put my hands on Lahmacun preparation and book marked this recipe long back.But some how it took this long to come out of my oven.

During Ramadhan we never have food from outside. So when I got minced meat, first thing came to my mind was this  yummyy dish to prepare for Iftar. Once it is in your oven, your house will fill with the irresistible smell of Lahmacun and will vanish from your table when served hot. Addition of parsley leaves are very important and it gives this dish a distinct aroma and taste.

Lahmacun is always our favorite and hope you will also start enjoying it as much as we do.

Luqaimat is one of the yummiest and my all time favorite middle eastern sweet snack. These sweet dumplings are very easy to prepare as well. If you had this yummy snack once in your life time, you would probably have craved for it again. Or if you have never had luqaimat, I suggest you must try once.

These fried sweet dumplings are a must on Iftar table amongst Arabs. We used to make this at least once during Ramadhan. Once you have a platter full of luqaimat in your hand, I bet you won’t stop eating them.

We both were keeping on eating this crunchy snack and finished all of them. These little snacks are little crunchy on outside, and little softer inside. Proofed batter are fried in hot oil and drizzle some honey or sugar syrup on hot dumplings and yummmm. We always prefer to enjoy it with honey.
