Red and velvety, classic chocolate cake will attract anyone with its look and most delicious taste. White chocolaty, creamy and cheesy frosting pair very well with these beautiful spongy cake. Believe me, they will simply melt in your mouth!!

Even though I have a very big sweet tooth, cake is not my thing. I hardly finish one serving of cake at a time. Hubby also usually won’t go beyond a piece of cake exception to this cake😄!! So I usually wait for very special Occassion to bake something like this!All thanks to my friend Rayida, who is a hands down home baker and her cake pictures inspired me a-lot. (I didn’t get a chance to taste her cakes yet!!). When I went home last time, she pushed me to attend a one day baking workshop, it was a good demo and got more idea on the area where I was least experienced. So for new year, I thought to bake a big fat cake to share with my neighbors and friends. But I couldn’t bake due to our short trip to Delhi around new year, which was unplanned!

On the day of New year, hotel where we stayed kept a counter with alot of pastries and cakes. I told hubby I couldn’t bake as I planned….let us indulge in some sweet treat here. so we bought one red velvet cake slice. After putting first spoon in my mouth,I was like “whether to cry or laugh”….ohh god, cake was tooo dry and tasteless….. how can a prestigious hotels serve these kind of cakes??!! totally disappointed with them 🙁 ….. Coming back to Tashkent, I decided to try red velvet cake….. in a miniature form, and anything miniatures, I feel they are the cutest!!! They are so easy and convenient to serve as well ….aren’t they??? I am so happy that I did try them….. they were sooooooo delicious and he had one, two and asked for the third serving at the same go 😄!!! Me, who is not a cake person had half batch of them…. shhhh 🤫….. We had them after breakfast, lunch and dinner as well 😉…..not joking guys, we really did!!!

The cake where really soft and moist. When it sandwiched with the white chocolate cream cheese frosting, you will feel like you are having white chocolate cheesecake with cake base!!! Dulce De Leche Cheesecake and Almond crusted Pie

Dulce de leche cheesecake with almond crusted pie is absolute delicious baked cheesecake with flaky and nutty crust. Cheese cake is one of our favorite dessert and this one really caught us.

Last weekend was a long weekend here, since 21st was ‘Navruz’ and we got holiday on 20th as well!! It is considered as 1st day of Spring and one of the biggest celebration in Uzbekistan. They celebrate it by making sweets &  Uzbek Plov (Pilaf) and share with friends and relatives. The most important and special of those are preparing “Sumalak” – very nutritious thick porridge consistency, creamy kind of thing, made out of sprouted wheat and cooked over night!! Sumalak preparation is a bit lengthy process ( I heard that process start some what a week before) ,but you will get very tasty and rich Sumalak after all those hard work.I have never seen its process and never tried making it as well. Every year my hubby’s colleague/friends used to send me a bottle full of “Sumalak” which is prepared specially on this day by them. Which is very tasty and healthy as well. They believe that if you had sumalak by start of spring,you won’t get sick during coming months and stay healthy though out summer. As some of you who knows me well,knew that I have a very big sweet tooth. If someone offering me something sweet and savory, I would for sure opt for the dessert/sweet without any doubt. Baking and making something sweet makes me really happy. At the same time, my hubby Jaan even though he likes sweets and chocolates, intentionally he used to avoid it. But when I made this cheesecake, he really loved it and gone for the second time because this dessert is not overly sweet.

I was so excited to try this cheesecake pie. Not added any sweetener in the pie crust. So the dessert really balanced the sweetness.Dulce De leche (cooked condensed milk) really gives caramelly and rich taste to the dessert. My favorite nuts almonds gave the crust nuttiness. You probably would have come across my love for this tasty nuts in my recipes like Coconut Condensed milk almond Cake , Healthy Dry Fruits Cake , Financiers CupcakeAlmond Muhallabia (Middle Eastern Ground rice & Almond Pudding)One savory dish with almond I shared is Chicken Korma with almond & sesame ;).

I used farmer’s cheese, because which is available here very easily and cheaply. You could for sure substitute ricotta cheese/cream cheese.

This is not a complicated recipe, you can also make this a day ahead or only pie crust dough can be prepared a night before you prepare the dessert and cheesecake part can be done the next day as well (thats what I have done).

Pumpkin Payasam Panna Cotta

Another really simple dessert – Pumpkin Payasam Panna Cotta, Indo-italian Fusion Dessert. Sounds interesting right?? Yes, fusion of two of my favorite desserts, Payasam (Kerala Special dessert) and Panna Cotta (Italian Dessert).

I love the veggy Pumpkin and it goes very well with both sweet and savory dishes. Very first post of my blog is also with pumpkin, that was Pumpkin curry, a savory version which I always used to make when I get the pumpkin. And also made few other Sweet recipes with pumpkin (Check it out).

Back home when Mom buy pumpkin, usually we demands for pumpkin payasam, it is really delicious.Sweetend with jaggery and flavored with cardamom powder and taste of coconut milk gives this Panna cotta a real Kerala traditional taste. Gave a topping of cashew and coconut crumple, that gave this creamy Dessert a real crunchy delight.

When I was thinking of a dessert for weekend, happend to watch my favorite channel Living Foodz and inspred by show hosted by chef Rakhi Vishwani’s Payasam Panna Cotta. We enjoyed this creamy sweety dessert after our weekend lunch. Hope you too gonna love this.

Flourless Fudgy Coconut Brownie

I have a soft corner towards chocolate. Having something with chocolate makes me really stress free and happy. I enjoyed baking this decadent, fudgy, nutty, chocolatty gooey brownie, and when my hubby asked for a second piece of brownie…I was even more happier!! This brownie was so delicious guys.

I thought this recipe is very apt to post this week, so kept holding without posting all these while. Even though we don’t use to celebrate valentine’s day, I am dedicating this post for all the wonderful couples out there who celebrate it. Happy Valentine’s day guys!!

This is sooo easy to put together.Without flour, brownie was more fudgy. Only one request to you all, please please use GOOD QUALITY CHOCOLATE. Quality of the chocolate definitely makes big difference in the taste of the brownie. flourless fudgy coconut brownie

Umm Ali (Egyptian Dessert)

Umm Ali/Omm Ali is a delectable and an age-old middle eastern dessert which gets creaminess from the milk & cream and crunchiness from the nuts used in it. This scrumpitious dessert is an absolute bliss. The perfect and soothing sweet dish for your Iftar too.

The arabic word “Umm Ali” literally means “Ali’s mother”. Sounds funny right?! But the bowl full of creamy & melt in your mouth dessert makes you forget about the name and you gonna love this and start making it for the rest of your dessert carving. There are many stories behind this sweet dish, but one thing for sure, Ali’s mother and wife of Sultan Ezz El Din Aybak, who has created this wonderful dessert is a Master Chef.

Traditionally Umm Ali is made using puff pastry, phyllo pastry or even with croissants as a base for the dessert. Topped with sweetened creamy milk and nuts of your choice. Believe me guys this is a super easy dessert and you will love-making it and enjoy having it.

Back in UAE, this delicious dessert is one of the unavoidable dessert in the buffet menu. I remember enjoying Umm Ali in our Office Iftar parties too. This dessert is traditionally served warm with a scoop of vanilla ice cream or with whipped cream on top. But trust me which is yummy by its own.
