Who doesn’t like to cook one pot meal for week day dinner?? And today I am with incredibly healthy and delicious one pot dish – Buckwheat plov/pulav/pilaf/plof whatever you may call it. There are a lot of variations of plov, it varies from countries to countries and even kitchen to kitchen. buckwheat chicken pulav/plov/plof/pilaf

Buck wheat is something I see a lot in the super market here and not dared to take it. I never had it before. Hubby used to say he had it a lot from college and hospital canteens here. It’s a staple food of Russians and used very widely here as well.

One fine day I was brave enough to buy it and try making our dinner with it. I had no clue how it tastes and to cook as well.Googled to find the solution and found that cooking method was more like rice. buckwheat chicken pulav/plov/plof/pilaf

It has a nutty taste and I completely loved its taste and texture. My decision to give a break to usual rice and chapathi with super food buckwheat was complete success.A great gluten-free alternative to wheat. Now one more dish added to our week day menu!!!! I used chicken to make it complete meal, you can use other meats or shrimps as well.

Ingredients :-

  1. Buckwheat groats – 2 cups (Roasted)
  2. Oil – 2 table spoon
  3. Onion – 2 big
  4. Carrots – 2
  5. Garlic – 3 to 4 cloves
  6. Cumin – 1 tea spoon
  7. Crushed pepper – 1 to 2 tea spoon (as per taste)
  8. Chicken – 400 g
  9. Ginger garlic paste – 1 1/2 tea spoon
  10. Pepper powder – 1 tea spoon
  11. Lemon juice – 2 tea spoon
  12. Salt – to taste

Direction :-

  1. Marinate the chicken with ginger garlic paste,pepper powder,lemon juice and enough salt and keep aside for minimum 30 minutes.
  2. Boil water in a deep bottom vessel, and add washed buckwheat into it with enough salt. When the grains 80 percent cooked, drain off the water by dumping into a colander and keep aside.
  3. In another deep bottom pan heat oil,splutter the cumin and  add in marinated chicken and fry until just  chicken lightly browned.
  4. Then add in finely chopped onion, grated garlic and Julienne cut carrots and saute well. Add in salt and crushed pepper, close the lid and cook until onion and carrot became soft and chicken almost cooked.
  5. Now add the cooked buckwheat into the chicken mixture and mix really well. Close the lid and cook for another 5 to 6 minutes in low flame.
  6. Serve buckwheat plove with yogurt and cucumber raita.

Tips & Tricks :-

  • If you have unroasted buckwheat,simply dry roast it in a pan for 4 to 5 minutes or until golden brown color.
  • Make sure not to over cook the buckwheat, it may become mushy.
  • Use your choice of meat or prawns instead of chicken.

Fatayers are famous middle eastern snacks prepared with pizza dough filled with different delicious fillings. Meat, spinach and cheese fillings are commonly used. As promised here is my fatayer recipe.I have made Spinach and feta combination and it became our favorite filling now for fatayer.Spinach and feta fatayer (Middle eastern triangle pie)

By making all lots of non veg items for Iftar, I thought of giving a vegetarian touch to my Iftar table. Vegetarian savory dishes pop up very rarely during this month here. So I thought spinach is by all means a healthy choice.Spinach filling paired very well with my Homemade Pizza Dough as well. Hubby is not a Pizza fan, but this little spinach triangle pie disappeared easily from here.

Addition of feta cheese really took the taste to the next level, those toasted walnuts added the crunch.These are not loaded with spices, so it was very comforting savory snack for Iftar!!

After my third attempt, I got those pies unopened after baking!! It’s really very important to squeeze out the moisture from the spinach and make it dry. Otherwise by the time your pies are baked … all those naughty little ones would have opened… haha….I was able to eat those…but were not good enough to present in front of you guys ;). Do you know I was waiting near the oven very curiously to see whether they are being naughty again!!! Childishness in me came out when I made this. So squeeze spinach as hard as possible….. it will be a stress buster exercise tooo ;-). Don’t worry, follow exactly all steps as given…You can also make half-moon shaped pies, that would be really easy in fact, you can follow the steps here. Serves ; 20 to 24 Fatayer

Ingredients :-

  1. Pizza Dough
  2. Spinach – 2 cup chopped
  3. Oil – 2 tea spoon
  4. Onion – 1 small
  5. Garlic – 2 cloves
  6. Parsley – 2 table spoon chopped
  7. Chilli powder – 1/4 tea spoon
  8. Cumin powder – 1/4 tea spoon
  9. Walnut – 1/4 cup chopped
  10. Feta cheese – 100 g (3/4 cup  crumbled)
  11. Salt & pepper – to taste
  12. Egg – 1 small (for egg wash)

Direction :- Spinach and feta fatayer (Middle eastern triangle pie)

  1. Prepare the  Pizza Dough and keep it ready or you can use store-bought as well.
  2. Add little salt to chopped spinach and keep aside for 10 to 15 minutes. Then take the spinach in muslin cloth and squeeze out the water from it.
  3. In pan add chopped walnut and dry roast until just it changes color slightly.
  4. Heat oil in the same pan, add chopped onion and grated garlic, saute until onion became translucent.
  5. In a bowl add spinach,sauted onion,parsley,cumin,chilli and mix well.
  6. Then add in crumbled feta cheese and walnut. Add salt and pepper to taste (remember you already added salt in spinach, so add if only require).
  7. Preheat your oven at 180 ° C.
  8. Now roll the pizza dough about 1/8 inch thickness and cut using around 4 inch diameter cutter. (Please keep unrolled dough close with kitchen towel to prevent from drying out)
  9. Now add 1 tea spoon filling at the centre of the cut dough (make sure not to touch the filling on the sides where you gonna punch together. If your filling touches the edges it will be difficult to stick together and will open up while baking).
  10. Now bring together two sides of the dough until centre and take third portion and pinch towards centre. You will get a triangle shape as in the picture.Close them and punch them firmly and well. Repeat the process with rest of the filling and dough.
  11. Place prepared fatayer on baking sheet.
  12. Beat the egg with a tea spoon water, brush it evenly on top of prepared fatayer (Egg wash gives shining and nice golden color).
  13. Bake it in the preheated oven for about 20 minutes until bottoms are lightly golden color. Then turn the grill/broiler mode and keep for 3 to 4 minutes just to get the golden brown color.(don’t keep more, it may tend to burn).
  14. Serve hot.

Tips & Tricks :-

  • It’s really very important to squeeze out excess moisture from the spinach.

Nombu Kanji/Payar Kanji (Rice & Greengram porridge with Coconut Milk)

Ramadan Kareem everyone! May you all have the best one!Here its second day of Ramadan today….Alhamdulillah so far it went well!

Nombu Kanji (‘Nombu’ means fasting and ‘Kanji’ means porridge, in my mother tongue – Malayalam) is one of the comforting and unavoidable dish to make during Ramadan. That aroma of roasting green gram itself is the smell of Ramadan for us!! When I made this yesterday, missed so much those days of Ramadan with Family!

This very delicious porridge, can be prepared easily. Cooking roasted green gram with rice and finally adding the coconut milk to make it rich and delicious. Back home we get a lot of coconut, so we use coconut milk while making this. Here when I make, I used to add half regular milk and half coconut milk. Sometimes I make regular milk alone. Both the ways, it’s very delicious and comforting.

Rajma Masala (Kidney bean in coconut cream)

Kidney beans in aromatic indian spices and coconut cream is one of our way to enjoy vegetarian dish which appear on our dinner table at least once in a week. I make sure those beans/lentils are included in the menu while I am planning for the week. This creamy kidney bean curry we loves to enjoy with white rice, putt (Kerala steamed rice cake) or any Indian bread

Being a non veg fan, vegetarian dishes are accepted rarely by my man here. But this rajma masala is both of us favorite.If I am making this curry for the dinner with putt, that day is a peaceful day for me….once I soaked this in the morning, curry will be ready in no time and there is no such effort for making Putt as well. We ladies always look for easy and delicious way to cook right??? Here is one among them!!!

Iced tea are summer refreshment of all tea lovers. I have one die heart tea lover here…non other than my hubby. I also became a tea person after making so much tea for him ;). This fresh fruit infused tea is something which you can’t stop drinking!!

When I got first fruit in season – strawberries, I was over joyed and made use of it every possible way. Recipe sure will follow, so that you all can try to enjoy them too ;). Do you make salads for your dinner daily?? Most of the days we do! As a malabarian, non veg dishes are must for us almost all day. So I always try to include some sort of salads too in dinner menu. This tasty Greek salad is one amongst them, a family favorite too.

This salad is very easy to put together and the combination of fresh and crispy vegetables with soft and salty feta cheese is amazing. Coated with simple and basic dressing, yet they are very flavorful.

This easy salad can be added to your party menu,beautiful color combination and very light and flavorful dressing will be a real crowd pleasing item. And also you will be tired after  making soo many varieties of main dishes and without much hard work and trouble, you can put together this salad.

Healthy Gingernut Biscuits

How happy I am when I get those goodies out of the oven and the heavenly aroma that just leave all around home!! If you are a home baker, you would also enjoyed those bliss whenever you bake something delicious!!! These are the easiest and healthiest biscuits I have ever made, and they are tasty too!!! These British biscuits really reminded me of that ginger candy we all had during our childhood. After having these biscuits you will get that slight burn of ginger in your throat…. how relaxing and delicious treat it was when we enjoyed this biscuits by dunking in a hot cup of milk tea.

Hey, this biscuits are made flourless, no butter/oil, refined sugar free and no eggs too…and they are healthy and delicious!! Richness of those ground cashew, nutty coconut, spiced with ginger and sweetened with honey, and zest of lemon really enhanced the flavour and you can whip this up in no time. For a Vegan version of biscuit use maple syrup instead of honey.

I couldn’t stop munching these simple beauty and before hubby comes in I finished half of it. Called him up and asked to get some more cashew to make next batch ;). These are really crunchy biscuits and they will become crunchier as it sits. When I took this next day for morning tea it was crunchier than how it was on previous day (day I baked). For me it is an expensive cookie, because cashew nut are little more expensive here compare to other nuts. I have to get lots of cashew when I come back from home next time :).

French Salad (Francuski Salat)

French Salad is one amongst many salads we usually order from restaurants during our weekend dinner out!! Its called ‘Francuski salat’ here and I fell in love with this salad ever since I tried from restaurant here. When I put my hands on making this salad in my kitchen, of course I must share it here, so that you guys also can try it out!!!

Match stick sized veggies and cooked meat which is coated with simple dressing – Mayonnaise and topped up with crunchy fried potatoes. Yes those crunchy potatoes are my favorite part of this salad and I am happy if I get only this salad, lipioshka (Uzbek local bread) and lemony sugary black tea. Why can’t this salad make a light meal with lipioshka??! You have your fiber and nutrients loaded veggies, protein from beef and bread gives the carbs and ending with lemon tea!!! Isn’t that a perfect light meal??

Chicken marinated with flavorful herbs and oil and grilled to the perfection. Super easy recipe which is loved by kids and elders alike. Swap the herbs as per your family’s liking.

At times we feel so lazzzy to cook, but somehow we must cook before our loved ones are home after work right?. Those lazzy days we find some quick and easy recipes and sometimes which comes out really delicious. This is one among such recipes which is really easy and tasty, you can have very relaxed dinner or hassle free lunch with this.

You just need a simple marination and pop into the pre heated oven or grill, and you are done!!! Chicken can be marinated a night before you planning it for lunch or in the morning if you are doing it for dinner.You can use this chicken in many other recipes as well. Left overs can make delicious sandwiches,salads etc….What more you want from this simple, yet delicious chicken?!

Creamy Carrot Soup

This creamy carrot soup is healthy & delicious, and absolutely easy to prepare. This became our favorite soup ever since I started preparing it. This soup is soo creamy and velvety, not added any kind of cream though! Beautiful root veg soup is very satisfying as well. Perfect for your autumny,wintery,springy seasons!!

My hubby wants something soon after he comes from the work. So if soup is ready I can do my dinner preparation very calmly. Soup will make him satisfy his hunger and he will start rolling through news channels and Indian politics. Favorite time of his and hatest of mine. (I mean to say when he start watching news, he wont even realize there is someone around him 🙁 , I will be blabbering and he wont be hearing anything. After everything he will ask, did you say something??!!! mmm poor me 😉
