Chicken meat ball clear soup Recipe (Soup chicken Tefteli)

Official winter day starts from today here in Uzbekistan, Yes December 1st! (as we say Mansoon starts on first of June in Kerala). Tashkent is getting colder day by day, there is nothing so comforting than a bowl of hot soup on these evenings to get cozy.  Sipping each spoon of this simple and flavorful soup make you warm from inside. Ladies, you will love making this because your kitchen will be less messy too ;-).

Since there is no addition of thickeners, the soup is so light and clear. Use whatever veggies you have in your pantry. Making chicken meat ball is super easy too. Meat ball soup is very common here in Tashkent, every house holds  prepare them very often. They call it Soup Tefteli (means meatball soup). Meatball clear soup and Mastava (another Uzbek special soup) are very commonly available in most of the Uzbek national food restaurants and cafes. Malabarians are not a fan of veggies and we rarely opt for veg meals. We are obessed with fish and other meats and I must say there are n number of varieties of non veg. Sad thing is that, I wont get fresh sea fish here in Tashkent,can get either frozen sea fishes or cold river fishes…. which doesn’t taste as we get back home :(.  I mean to say, we doesn’t have much malabar vegetarian signature dishes.Even then I love to try veg varieties of other kerala side dishes and some north indian aromatic and flavourful veg curries.

But, its hard to find an indian house that doesn’t stock different types of dals. When I ran out of vegetables and meats, or if lazzy to cook…. easiest way I used to opt is daal fry and egg omlet with chapathi.

This kuruma is a rich,delicious and nutritious accompaniment with roti/chapathi/parathas. All the goodness of red lentils,bengal gram, green gram and chick pea with the spinach and cabbage makes this curry extra ordinary. Flavour and richness of cashew and coconut takes this to the next level. This is a must try recipe and I am sure you will love this as we do. Now this recipe took a better place in my weekly menu!!

Healthy Dry Fruits Cake

First of all Marry Christmas to all my lovely readers! Baking bells already started ringing!! You would have started your preparations. Baking cookies and cakes and packing for your friends and guest. Treat your family and friends this festive season with this tasty and healthy dry fruits cake! There are no flour, no butter, no added sugar too…. its interesting right?! Yummyy tooo..

Back home, even though we don’t celebrate Christmas at home,when I was small kid,during Christmas we get fruit cake from Rosy chechi (we call elders ‘chechi’ with respect in Kerala),who used to help my mom in house hold and other things when we were small. Even then we can get so many varieties of cakes in market,we used to wait for her cake. And another chechi, Philomina….she used to bring us her tasty Biriyani, payasam and all, specially made for us on Christmas day. Mom wont cook lunch on that day. Me and my bro used to go her home to see the decorated Christmas tree, and beautiful decorative star lights. Now I miss all those.

Here they celebrate Christmas on 7th of January as in Russia and holidays starts from 31st December for 10days. Even then, started decorating everywhere now itself. A feeling of festival started already.

In our Kerala dishes, we include most of the veggies cooked as some curry,stir fries etc…at my home salads we make mostly with the combination of cucumber,tomato,onion combination with some salt and pepper or my dad’s special cucumber,tomato, lettuce with salt and olive oil. I was not a fan of salad…. when I started my diet very religiously, most of the dinner and lunch I included some raw veggies. I was bored with having same style of salads. Thats when I started inventing different salads and now in love with them.

I love the combination of tanginess from lemon juice, little sweetness from honey, some hotness from pepper. This dressing really gives nice taste to this salad. I am sure you will love it, as I did :). This is something you can make very quickly.

Besides that when I read about the health benefits of radishess….I was like wowww…. it’s just a power pack of nutrients. This salad is definitely a healthy addition to your meal.

Indian cuisines differ with states or even districts. Aloo paratha is a famous breakfast item in north,central part of India.Even though it is traditionally used as breakfast item,it can be taken at any time of the day… Boiled potatoes lightly spiced up and stuffed in whole wheat dough, then cooked in hot griddle.

Our favorite shopping destination is our own capital city – Delhi.I fell in love with aloo stuffed paratha during our delhi trip.Hot aloo paratha with lemon pickle…and hot cup of coffee…. woww…what else you want??!!what a delicious way to start a day!! We do shop for hours after a power pack breakfast with this or after roaming around in CP(Conaught Place – one of the famous business/shopping destination in delhi), we fuel up with hot aloo paratha – you dont need to wait for long after ordering :).

Another place where we enjoy Aloo paratha is Delhi airport food court ;). Usually our flight to tashkent used to be at midnight. So our dinner on that day will be from airport food court.My husband will be searching what he wanna eat (he will be confused and used to end up in some fast food), but i go directly to aloo paratha counter,order one and a filter coffee from “Vangoo” (Tamil food stall).

You can also pack this for your kids in tiffins to school, no need of curry and other mess up. its really filling tooo.

There are alot of varieties of Aloo paratha. It differ with technique of preparation and stuffing.

Beetroot Soup

Welcoming another winter again….this is my 3rd winter season after coming here in tashkent….its raining here for last few days and temperature is coming down … getting ready with jackets and boots again :).

1st year i was very excited to see snow….lazzzy morning…..and lying down in sofa under blancket and watching tv….having some hot coffee/tea…munching home baked cookies or snacks awww…… but when i enjoyed the essence of spring and summer season…I really don’t wanna welcome winter..( alot of fresh and sweet fruits…. fresh air with greenery…..going out with just slippers and cotton tops…..walk freely….sitting in parks and watching kids playing..omg i have to wait another 6 months to get all those luxury back).Yeh after coming here I witnessed all four seasons at its core – spring,summer,autom and winter. Back in UAE…we had only hard core summer and slight winter ;)…..even then I miss u alot UAE….I have alot of sweet memories there…. god has given its own speciality to all countries…..

Its raining outside…so i thought i will make healthy, simple, yet delicious soup for this evening…..yes beatroot soup :)…lets see how its made…
