Red and velvety, classic chocolate cake will attract anyone with its look and most delicious taste. White chocolaty, creamy and cheesy frosting pair very well with these beautiful spongy cake. Believe me, they will simply melt in your mouth!!

Even though I have a very big sweet tooth, cake is not my thing. I hardly finish one serving of cake at a time. Hubby also usually won’t go beyond a piece of cake exception to this cake😄!! So I usually wait for very special Occassion to bake something like this!All thanks to my friend Rayida, who is a hands down home baker and her cake pictures inspired me a-lot. (I didn’t get a chance to taste her cakes yet!!). When I went home last time, she pushed me to attend a one day baking workshop, it was a good demo and got more idea on the area where I was least experienced. So for new year, I thought to bake a big fat cake to share with my neighbors and friends. But I couldn’t bake due to our short trip to Delhi around new year, which was unplanned!

On the day of New year, hotel where we stayed kept a counter with alot of pastries and cakes. I told hubby I couldn’t bake as I planned….let us indulge in some sweet treat here. so we bought one red velvet cake slice. After putting first spoon in my mouth,I was like “whether to cry or laugh”….ohh god, cake was tooo dry and tasteless….. how can a prestigious hotels serve these kind of cakes??!! totally disappointed with them 🙁 ….. Coming back to Tashkent, I decided to try red velvet cake….. in a miniature form, and anything miniatures, I feel they are the cutest!!! They are so easy and convenient to serve as well ….aren’t they??? I am so happy that I did try them….. they were sooooooo delicious and he had one, two and asked for the third serving at the same go 😄!!! Me, who is not a cake person had half batch of them…. shhhh 🤫….. We had them after breakfast, lunch and dinner as well 😉…..not joking guys, we really did!!!

The cake where really soft and moist. When it sandwiched with the white chocolate cream cheese frosting, you will feel like you are having white chocolate cheesecake with cake base!!! Custard or pastry cream is the most decadent and easiest pudding you can ever make….do you agree??  Vanilla custard with fruits salad is the pudding mostly made during my childhood. More than the fruits, our eyes would be on those pastry creams and we used to enjoy every bit of it. At that time they used to make with the custard powder we can get ready from the super markets. I think still back home everyone using that easiest short cut for making custard. Here I made using the egg yolks, which was really creamy and luscious.

And when I added delicious hazelnut praline to this most humble dessert, which for sure took them to the next level. Oh that caramely and nutty goodness….yummmm. And can you go wrong with the hazelnuts???  I doubled the recipe of praline than I need for this recipe, thinking that I can store them for other recipe which I was planning to do after 2 days, but guess what? half of the portion I just had as it is….. If hubby were at home at that time, we both would have finished them off. It was too good to have by its own.

Even though you can enjoy this pastry cream just the way it is, it can be used with your eclairs, cream puffs, as filling to your cupcakes or to frost your cakes as well. It will be sooo good with your Crepe  for breakfast as well!!!

You will have those 4 egg whites after making this!!! You can use them to make healthy omlet for breakfast yea!! Or why don’t you try Financiers.…it will be so yummm with your evening cup of coffee. Left over egg whites will freeze well too.

Its pumpkin pumkin everywhere now!! How can someone resist experiment with these nutritious goodies?!! I love and love anything with pumpkin, being it  sweet or Savory. Pumpkin pie is not something which I was grown up with or my childhood favorite, but its in my current favorite list and will be there forever from now on!!!

The flaky crust and smooth and luscious filling is simply amazing. Made pie filling from scratch. Its super simple to make. You just simply need to pop pumpkin/butternut squash in the oven, bake till it is soft and make puree. Add your choice of spices and rest of the ingredients in food processer and your pie filling is ready!!!

Contrary to the traditional pumpkin pie, I have kept some hidden yumminess in between crust and pumpkin filling 😉….coconut and cashew mixture, to give slight crunch and nuttiness!! The crust I used here is my favorite one, which I used for my Dulce de leche cheese cake as well.

Hubby’s colleague sent me alot of butternut squash from his own vegetable garden. I was literally celebrating with them all these days 😄.

Don’t forget to grab some pumpkin and try this recipe if you are a pumpkin lover like me 😋, you don’t need a special occassion to make this…. If you are less member family like me, freeze the left over….it will stay there for more than a month!!

I made Financiers with left over egg whites. You can use them for coating while making spring roll or freeze them until you find a appropriate recipe.

Dessert is always my weak area and I may avoid my main meal to dig in to the dessert and fill my tummy with those deliciousness. Cheesecake is in my top favorite desserts, love those creamy lusciousness with mildly sweet crust. Have you checked my absolutely delicious Dulce De Leche Cheesecake?

Do you know why I love this white chocolate cheesecake soo much??!!They are so incredibly delicious ,easy to make,Creamy and simplyyyy melt in you mouth, I can make this ahead and more over, its No Bake Cheesecake tooo!!!!. There is no gelatin added. Hmmm what I poured on top to get that tangy balance……yes my favorite Lemon Curd. No mood for lemon curd??!! Top it with your other favorite fruit topping or Simply opt it out guys…. it taste great by its own! Please use good quality eating chocolate if you wish to get best cheesecake (No baking chocolate please).

I made this cheesecake when we invited my friend and family here for dinner and we simply enjoyed it to the bit. When we plan for inviting someone here, first thing I will start thinking is “What I will make for dessert”?!!! and I always make something which I can make a day or two ahead. There are two reason why I wanna make it ahead of time –  One if at all dessert experiment is failing, I have enough time for plan B 😉 and second is next day I can completely spend my time on main meal (which mostly I make Indian meals, as I wanted to introduce our Indian cuisines to Uzbek guests).

This pictures were clicked in hurry just an hour before guest arrive and sun was about to set too, somehow managed to get few clicks. You might be thinking why can’t I make those desserts some other day when no guests and take pictures. If I make those delicious goodies for our 2 member family, hubby will take only a slice or at the most second slice next day!! Finally I will end up indulge in it and finish off all those without any doubt! But weighting scale won’t show mercy on me guys ;-), huh I put on weight soo fast :(.  I envy those ladies who dig in so much and still maintain their curves :(. Anyways it taste soo great than it looks for sure!!! Ingredients are very easily available and no much fuss too!

Hello friends…. I am back after a small break with a very delicious and easy recipe – Lemon Curd from scratch. Was on vacation and couldn’t be active and look after my blog. This recipe was prepared and thought to post a month back, but you know how the situation will be when you go back home for vacation??!! Mind was not at all up for blogging from there! Hope now on I will be able to post regularly.

Lemon Curd is very delicious and velvety dessert spread, which is very versatile goes well with your Scones, toasts,cookies, filling for your tarts, or as topping for your Cheesecake or simply delicious by its own. You can make very tasty lemon curd easily at the comfort of your kitchen with this simple recipe. Ingredients for the lemon curd you can find easily in your pantry. So now on,no more preservatives added store bought Lemon curd ;).

Preparing lemon curd was in my to do list for long. When I wanted my cheesecake a citrusy topping, I did not think much. Put my hands on long awaited Lemon curd. If you are a fan of lemony flavor, this is for you. I really love lemon flavor. Really miss my “Lemon puff biscuits” which we get back in Abu Dhabi, one of my favorite biscuits it is, unfortunately I couldn’t find em here so far :(. This lemon curd really satisfied me…. I did spread them on salty crackers too…it was really yummy!

Mini Kunafa/Kanafa with home made Kunafa Dough

Kunafa is a delicious cream and cheese filled middle eastern dessert. This sweet dessert is called by different name like Kanafe,  Knafe, Kunafa, or Kanafa. Some call it as Queen of middle eastern dessert. No wonder why Kunafa called so…. it is sooo scrumptious dessert which you can’t stop having it.They are prepared stuffing the shredded phyllo dough(Kataif) either with cheese or cream or with combining both cream and cheese.

Arabic desserts are very comforting during Iftar and most of the time my sweet dish used to be some middle eastern dessert. Best thing about arabic dessert is that they are very easy to make and taste sooo delicious.

Since I couldn’t find Kunafa dough here, to satisfy my kunafa carving I put my hands on making dough at home itself. Believe me they are easy to make with very simple ingredients! This dough can be prepared in advance, it will freeze well. Then I filled it with both homemade cream and mozzarella cheese. Traditionally Akawi cheese is used, since mozzarella is easily available ,I used that. You can also use ricotta cheese or fresh home-made cottage cheese too.After baking poured the simple syrup to sweeten them which is flavored with rose-water and orange blossom water. Hmmm they were smelling amazing!!!!Contrary to the traditional one big round Kunafa,  I made it in little muffin tray which looks so cute and easy to serve individually.

Amaze your guests and family with this delicious and cheeselicious Kunafa. shhhh don’t tell them that Kunafas are soo easy to make ;)….. Serve it with some hot black tea or coffee. They gonna love you even more!! Here is the recipe….

Layali Lubnan (Lebanese Nights) – Semolina Pudding Pie

Yet another easiest Middle Eastern Dessert is here for you – Layali Lebnan/Lubnan (Labanese Night). I am not sure why this delicate sweet dish got this name, but I know one thing – this is one among scrumptious desserts middle easetern people were/are enjoying for years. This goes well on any occasion and/or for ending your weekend meal, believe me there is no hard work to make this simple beauty.

usually this dessert used to make in two layers. Base with semolina pudding and topped with thick and smooth cream. I have given a third layer of nuts in between semolina and cream for an added crunch. Nut layer really enhanced the taste with little crunch in between the soft and delicate pudding. As always, rose-water fragranced sugar syrup gave soothing taste.

Umm Ali (Egyptian Dessert)

Umm Ali/Omm Ali is a delectable and an age-old middle eastern dessert which gets creaminess from the milk & cream and crunchiness from the nuts used in it. This scrumpitious dessert is an absolute bliss. The perfect and soothing sweet dish for your Iftar too.

The arabic word “Umm Ali” literally means “Ali’s mother”. Sounds funny right?! But the bowl full of creamy & melt in your mouth dessert makes you forget about the name and you gonna love this and start making it for the rest of your dessert carving. There are many stories behind this sweet dish, but one thing for sure, Ali’s mother and wife of Sultan Ezz El Din Aybak, who has created this wonderful dessert is a Master Chef.

Traditionally Umm Ali is made using puff pastry, phyllo pastry or even with croissants as a base for the dessert. Topped with sweetened creamy milk and nuts of your choice. Believe me guys this is a super easy dessert and you will love-making it and enjoy having it.

Back in UAE, this delicious dessert is one of the unavoidable dessert in the buffet menu. I remember enjoying Umm Ali in our Office Iftar parties too. This dessert is traditionally served warm with a scoop of vanilla ice cream or with whipped cream on top. But trust me which is yummy by its own. Almond Muhallabia (Middle Eastern Ground rice & Almond Pudding)

This is one of the easiest and yummiest middle eastern dessert, which can be prepared for Iftar. After a long day of fasting,this mildly sweet and delicate dessert gives so much comfort. We always prefer to have one sweet dish for Iftar – because which gives burst of energy to move on for further prayers and activities.

You don’t need to stand in the kitchen for hours to make this sweet dish. This will be ready in 15 minutes and you just need to chill it in the refrigerator for an hour or two. Milk is thickened with powdered rice and I added ground almond to make it more healthy and super delicious. And also fragrance of rose-water and flavoure of little cardamom powder takes this rice pudding – Muhallabia to the next level.

You can serve this chilled as a dessert or  hot as a breakfast item in the morning since you can get all the goodness of the milk and almond in a bowl.Serving choice is all yours :). This can be made ahead of time, so if you are preparing it for Iftar, you can relax at the last-minute.

Pumpkin is a very versatile veggyyy and one of my favorite too… it goes very well with both sweet and savory dishes. Very first post of my blog was a savory side dish with pumpkin – Pumpkin Curry.

This dessert idea I got from my cousin S, who is a contestant of a cooking reality show,playing in Kerala local channel. This was a winner recipe on that day and judges loved it and gave very good comment. He did it with pumpkin and berry and I didn’t have berries handy since this halwa was planned last minute for my guest as a dessert. And here as well it was a winner, my guest too loved it. They packed and took some with them.

Anyways……My wishes and prayers are always with him….good luck bro…keep going!!👍

This is a rich dessert,yet nutritious.You get the nutrition from pumpkin and dates. Added roasted cashew for crunchiness. Addition of milk and condensed milk gave little more richness. Touch of ghee gave this pumpkin dessert an extra punch. This was heavenly!!! I am sure you gonna enjoy every bit of it!

If your kids doesn’t love vegetables, this is the best idea to make them eat….the power pack of Vitamins – Pumpkin!!! They will be happy to have dessert and you can be satisfied of making them eat some veg.
