Poffertjes (Dutch Mini Pancakes)

Poffertjes Recipe (Dutch Mini Pancakes) Yeast Pan cake

A classic dutch treat, fluffier mini pancakes are foolproof and easier recipe for weekend breakfast or brunch. They made with regular flour and buck wheat flour, used yeast for fluffier texture and simply served with generous amount of softened butter and powdered sugar. A breakfast couldn’t be easier and tastier than this – hmmm not exaggerating guys, they are soo good. Do try once.

We have been to Amsterdam Recently (what a beautiful place to be – one of the place where we wanna go back again!! May be i will write about it in detail in some other post!). And first thing I wanted to try from there was mini cute Peffertjes. As a foodie, before we go, I read about Amsterdam cuisines and dishes I could try from there and made sure we tasted most of them from the native place. We got to try them from Albert Cuyp market, which was recommended by a shop keeper lady in Amsterdam. We had no plan to go to the market, but I very much wanted to taste it and we couldn’t get it from Amsterdam Central, we decided to go there.

Poffertjes are traditionally made in cast iron Poffertjes pan, which has a dozen of cavities. Since I was not owing them, I used our “Karayappam chatti/Unniyappam chatti” (Pan which used to make Kerala’s own snack- Unniappam) which has more deeper cavities than Poffertjes pan. I filled them half way, so that I can get some what similar shape of it.

You can also substitute buck wheat flour with all purpose flour alone, if it is not available.

If you wanna serve Poffertjes more romantic and glamorous way 😉 top them with whipped cream and few red & sweet strawberries. Or some fruit jams and fresh cream would be a great idea too. Why not some drizzles of chocolate sauce??!! Serve them your favorite way guys. But don’t forget to try good old traditional way of butter and powdered sugar. Lemme know in comment how did you enjoy them?

Whole Wheat Scones

Whole Wheat Scones

Freshly baked scones with some Jam and cream makes a perfect breakfast with hot cup of tea or coffee… right?! When my  Raspberry Jam were ready in jars, I very badly wanted to bake some scones too. This recipe was book marked long time, I thought this is the right time to bake.

This whole wheat scones are not overly sweet, but when you have it with Jam it gives perfect sweetness. Clotted cream and jam with scones pairs well too. I substituted the all-purpose flour with whole wheat flour from the original recipe, which gives extra nutty flavour and also I wanna avoid using those white flours as much as possible.

Unakka chemmeen Unda Putt Recipe (Kerala Style Dried Prawns Stuffed Steamed Rice Balls Recipe)

Unakka chemmeen Unda Putt Recipe (Kerala Style Dried Prawns Stuffed Steamed Rice Balls Recipe)

Unda Putt is a Kerala evening tea time snack/Iftar recipe or it is also used as a tasty breakfast item. One of our family favorite too. Even though we make different filling to this cute little rice balls such as mussels (kallummakaya), Clam (Kakka irachi) etc…, Prawns (Chemmeen) are stuffed mostly.

Back home in Kerala, we makes this using fresh prawns. Unfortunately I don’t get fresh prawns here easily, I used dried one. Dried one also taste yummy. Once when mom called me, she told that they had ‘Unda putt’ for breakfast, I really craved for that and tried with dried prawns which was handy with me. It came out well and I started making this with dried prawns.

Usually I make this on saturday breakfast. You can make the filling previous day night, so that you just need to make the dough and fill it and steam it in the morning. If I have time in the night, I used to fill the dough at night itself and keep it in the fridge. So that next day breakfast will be easy and hassle free, just only need to steam it.

This can also be given as tiffins to your kids and husbands, so that they can have it easily without making any mess. This cute little Unda putt also can pack while you going somewhere out or for picnic.

Lets see how this tasty and easy Chemmen Unda Putt (Prawns Stuffed Steamed rice balls) are made…………

Potato Pancake

Potato is one of my favorite veggyy and I love to have it in any form. This pancake is one of the popular breakfast item here in Tashkent. I think they would have got that culture from Russians.(shhh… I don’t know…this is just my guess ;)…) whatever it is, the pancake with this humble and super nutritious veggyy  is really easy to make….yet delicious!

I became a fan of potato pancake after coming here. I always used to google, google and google to find out something new to add to our menu, especially breakfast recipes. Thats how I got this recipe and fell in love with this. Some people used to top it with meat fillings as well.

Potato pancake is one of the item which I usually make on lazy weekends. It doesn’t take much time to put together. Hot pancakes with tomato ketchup and some sour cream…. our usual way of enjoying this soft and delicious breakfast item.
