Vatrushka Recipe (Sweet cheese and apricot filled buns)

Vatrushka Recipe (Sweet cheese and apricot filled buns)

Vatrushka is cheese topped buns, one of the most popular breakfast item here in Tashkent. Every cafes and bakery section of super market here, you can see vatrushka. One among the snack/breakfast item they prepare using farmers cheese (tvorog). I have already shared some of the russian/uzbek recipes with farmers cheese.  Vatrushka is cheesecake in soft and fluffy buns…..aren’t that sounds interesting??!! It really taste great and it makes a filling breakfast too.

All the ingredients are very easily available and can be prepared without much hard work.My friend Nazeema (hubby’s colleague’s wife) who shared this recipe with me (a bunch of recipes she shared with me actually), very long time ago. Was keeping on postponing it because hubby is not a big fan of yeast breads.

When I saw MFB challenge this month subject as “breakfast” item, did not think much. Every month used to try to participate for the challenge, but one or other reason, I fail to  post anything on those days. I am glad that this month it’s up.

Usually cheese filling used to be plain, without any dry fruits addition. Lemme tell you, apricot very well take the cheese filling to the next level. They really complement each other. If you can’t find farmer’s cheese, cream cheese, cottage cheese or ricotta cheese can be substituted. Apricot can be substituted with raisins, dried cherries, cranberries etc.

You don’t need to wake up early morning to prepare Vatrushka. I have prepared the dough night before and refrigerated it. Only filling and assembling I did it on the next day.

Eclair with hazelnut praline custard

You all might have started planning and preparing for upcoming holidays, and no table will complete without those baked goodies. These classic french dessert – eclairs for sure will attract all those sweet tooths.  They are made out of choux dough and filled with custard and topped with chocolate ganache. Eclairs are one of my favorite pastry and I enjoy making and indulging in it. Usually I used to prepare them with vanilla custard and this time I have used my favorite ever, most delicious Hazelnut praline Custard /Pastry cream  Ohhh, they were soo beautiful marriage of yumminess!!

Unsweetened pastry with moderately sweet hazelnut pastry cream and topped with chocolate ganache – can that go wrong?!The pastry will puff up with that hollow inside to fill the cream. This combination was there in my mind for quite sometime and finally I am happy it happened.  You don’t need to do everything on the same day. What I did was, prepared my pastry cream previous day so that it can get chilled well. Next day prepared the pastry and when they were cooling down, made the chocolate ganache.

You can make them in advance if you expect any guest as well. Let me know in comments how you enjoyed this eclairs. Lets see the recipe……..

Dulce De Leche Cheesecake and Almond crusted Pie

Dulce De Leche Cheesecake and Almond crusted Pie

Dulce de leche cheesecake with almond crusted pie is absolute delicious baked cheesecake with flaky and nutty crust. Cheese cake is one of our favorite dessert and this one really caught us.

Last weekend was a long weekend here, since 21st was ‘Navruz’ and we got holiday on 20th as well!! It is considered as 1st day of Spring and one of the biggest celebration in Uzbekistan. They celebrate it by making sweets &  Uzbek Plov (Pilaf) and share with friends and relatives. The most important and special of those are preparing “Sumalak” – very nutritious thick porridge consistency, creamy kind of thing, made out of sprouted wheat and cooked over night!! Sumalak preparation is a bit lengthy process ( I heard that process start some what a week before) ,but you will get very tasty and rich Sumalak after all those hard work.I have never seen its process and never tried making it as well. Every year my hubby’s colleague/friends used to send me a bottle full of “Sumalak” which is prepared specially on this day by them. Which is very tasty and healthy as well. They believe that if you had sumalak by start of spring, you won’t get sick during coming months and stay healthy though out summer. You can read more about Navrus here and Sumalak hereHappy belated Navruz everyone!!

As some of you who knows me well, knew that I have a very big sweet tooth. If someone offering me something sweet and savory, I would for sure opt for the dessert/sweet without any doubt. Baking and making something sweet makes me really happy. At the same time, my hubby Jaan even though he likes sweets and chocolates, intentionally he used to avoid it. But when I made this cheesecake, he really loved it and gone for the second time because this dessert is not overly sweet.

I was so excited to try this cheesecake pie. Not added any sweetener in the pie crust. So the dessert really balanced the sweetness.Dulce De leche (cooked condensed milk) really gives caramelly and rich taste to the dessert. My favorite nuts almonds gave the crust nuttiness. You probably would have come across my love for this tasty nuts in my recipes like Coconut Condensed milk almond Cake , Healthy Dry Fruits Cake , Financiers CupcakeAlmond Muhallabia (Middle Eastern Ground rice & Almond Pudding)One savory dish with almond I shared is Chicken Korma with almond & sesame ;).

I used farmer’s cheese, because which is available here very easily and cheaply. You could for sure substitute ricotta cheese/cream cheese.

This is not a complicated recipe, you can also make this a day ahead or only pie crust dough can be prepared a night before you prepare the dessert and cheesecake part can be done the next day as well (thats what I have done).

Honey Cake (Medovik)

Honey cake (Medovik)

Hey. Belated happy new year to all my lovely readers. I am back again after a very long gaaap that I have ever taken from blogging world!!! Due to some or other reason, I had to stand away from this. Anyways hope I will be able to post regularly from now on.

I am here with a delicious recipe – Honey Cake. Its an age old Russian cake, called here as ‘Medovik’ (in Russian). This is very tender and delicate cake, which is so rich and delicious. You have to prepare the cake before a day you serve it,both the cream and cake will pair very well and will tastes amazing. The Star ingredient in frosting is Delce De Leche (Cooked condensed mik), so you could imagine how yummy this cake would be!!

This was in my to do recipe list for quite sometimes. Whenever I see the honey cake pieces here in bakery shops, used to carve for a portion. Never bought it thinking I will make myself. I rarely put my hands on cake with frosting because we both can’t have it completely. Thats how making honey cake also took this long. So when we invited a friend for lunch, I thought of making Honey cake as a dessert.Served them after lunch, packed him some pieces of cake, we kept few for ourselves and I have given away some for my miklady. Got good comment from hubby jaan and his friend. He had it from outside many times and said this is how it usually tastes. Most happiest part was milklady took recipe from me saying that which came out really well ;). I was so thrilled when I heard from her.

Khachapuri (Georgian cheese stuffed bread)

Khachapuri (Georgian cheese stuffed bread)

Kachapuri is bread dough stuffed with mixed cheese filling and baked to the perfection. Addition of farmer’s cheese in the dough made it so tasty and soft. Over all a power packed breakfast, and you can put together without much fuss.

Are you a cheese lover??? Then definitely you gonna love this. Actually I came to know about this was, when I had a lot of farmers cheese left in my fridge and I was searching for recipes where I can use it as some breakfast item. I got this recipe from “olga’s flavours factory” one of my favorite blog where I tried so many Russian and other recipes….thanks to her.

This is a famous Georgian cheese stuffed bread, I never had it before. My hubby told me he had it during his Georgia trip, taste is almost similar to what I made. Hmmm got certificate ;)…. but when I searched for khachapuri recipe, found so many varieties…don’t know which is more authentic way…but still this one is so lovely…
