Chicken Kurma/korma is one of the famous and widely prepared Indian side dish, thick gravy based curry…..loaded with aromatic Indian spices. Style of preparation varies from region to region. Which is usually served with any Indian Bread or white rice. Whenever we prepare kurma, we will end up by licking fingers. They are soo delicious.

This version of Kurma is super easy and made of yogurt based gravy, Almonds and sesame gave thickness and nuttiness to the Korma. Lots of green chilli used to give that hot kick to the Kurma. Garam masala and powdered cumin gave fantastic Indianish aroma. There is no usual sauteing kind of stuff in this kurma except for the onion frying. Just take all the ingredients together and slowly cook to the perfection without adding any water!!!Moisture from chicken and yogurt helps to tenderise the chicken.

Ever since I got this recipe from Fox life TV show “Food Safari”,  I added this to our weekdays dinner menu with little changes. They are soo easy and delicious.Anyways, lets see the recipe…. enjoy cooking!!

Dulce De Leche Cheesecake and Almond crusted Pie

Dulce de leche cheesecake with almond crusted pie is absolute delicious baked cheesecake with flaky and nutty crust. Cheese cake is one of our favorite dessert and this one really caught us.

Last weekend was a long weekend here, since 21st was ‘Navruz’ and we got holiday on 20th as well!! It is considered as 1st day of Spring and one of the biggest celebration in Uzbekistan. They celebrate it by making sweets &  Uzbek Plov (Pilaf) and share with friends and relatives. The most important and special of those are preparing “Sumalak” – very nutritious thick porridge consistency, creamy kind of thing, made out of sprouted wheat and cooked over night!! Sumalak preparation is a bit lengthy process ( I heard that process start some what a week before) ,but you will get very tasty and rich Sumalak after all those hard work.I have never seen its process and never tried making it as well. Every year my hubby’s colleague/friends used to send me a bottle full of “Sumalak” which is prepared specially on this day by them. Which is very tasty and healthy as well. They believe that if you had sumalak by start of spring,you won’t get sick during coming months and stay healthy though out summer. As some of you who knows me well,knew that I have a very big sweet tooth. If someone offering me something sweet and savory, I would for sure opt for the dessert/sweet without any doubt. Baking and making something sweet makes me really happy. At the same time, my hubby Jaan even though he likes sweets and chocolates, intentionally he used to avoid it. But when I made this cheesecake, he really loved it and gone for the second time because this dessert is not overly sweet.

I was so excited to try this cheesecake pie. Not added any sweetener in the pie crust. So the dessert really balanced the sweetness.Dulce De leche (cooked condensed milk) really gives caramelly and rich taste to the dessert. My favorite nuts almonds gave the crust nuttiness. I used farmer’s cheese, because which is available here very easily and cheaply. You could for sure substitute ricotta cheese/cream cheese.

This is not a complicated recipe, you can also make this a day ahead or only pie crust dough can be prepared a night before you prepare the dessert and cheesecake part can be done the next day as well (thats what I have done).

Almond Muhallabia (Middle Eastern Ground rice & Almond Pudding)

This is one of the easiest and yummiest middle eastern dessert, which can be prepared for Iftar. After a long day of fasting,this mildly sweet and delicate dessert gives so much comfort. We always prefer to have one sweet dish for Iftar – because which gives burst of energy to move on for further prayers and activities.

You don’t need to stand in the kitchen for hours to make this sweet dish. This will be ready in 15 minutes and you just need to chill it in the refrigerator for an hour or two. Milk is thickened with powdered rice and I added ground almond to make it more healthy and super delicious. And also fragrance of rose-water and flavoure of little cardamom powder takes this rice pudding – Muhallabia to the next level.

You can serve this chilled as a dessert or  hot as a breakfast item in the morning since you can get all the goodness of the milk and almond in a bowl.Serving choice is all yours :). This can be made ahead of time, so if you are preparing it for Iftar, you can relax at the last-minute.

Financiers are little classic french tea cake baked using ground almonds. These are light and moist delicious treat which is very easy to prepare!It seems these little spongy cake got the name ‘financiers’ from the traditional rectangular mold, which resembles a bar of gold.

Traditionally financiers are made using small rectangular loaves. Since I dont have it handy…I used my cupcake molds. Whatever mold you use…. these are amazing. This is for the nut lovers, since the core ingredient is ground almonds. Other ingredients are egg white,sugar,little flour and butter.

It doesn’t take much time to prepare, but I am assuring a delicious treat for your family.Recipe adapted from my favorite pastry chef Anna Olson.

I love to bake anything and everything….yeh today we gonna bake something very divine!!!This coconut condensed milk almond cake is very moist and full of flavors!
