Adjust Servings:
1kg plantain (Neither too ripe nor too raw)
4 Egg (Big)
6 table spoon Sugar
4 table spoon Cashew Nuts (chopped)
2 table spoon Raisins
1 tea spoon Cardamom Powder
a pinch Salt
1 to 2 table spoon Ghee (Clarified butter)
for deep frying Oil

  1. Steam and cook the Plantain, then mash smoothly using a masher or grinder. (There should not be any lumps, it should be smooth and silky)
  2. In a bowl beat the egg,sugar, a pinch of salt and cardamom powder well until sugar dissolves completely.
  3. Heat a pan,add the ghee and fry chopped cashew nuts until light golden color. Then add raisins and saute until it bubbles up.
  4. Then pour the egg mixture and cook and scramble the egg well, then switch off the flame.
  5. Now grease your palm with oil, take a lemon sized mashed plantain(or the size you desire) and flatten it.
  6. Put a spoon of prepared scrambled egg in the centre, fold and make oval shape patties (as shown in the picture)
  7. complete the rest of the plantain and egg mixture as above.
  8. Heat the oil in a deep bottom frying pan in a medium flame, and fry all the Kayi ada/Unna kaya until golden brown color.
  9. Your yummy stuffed plantain fry is ready.
  10. Serve with a hot cup of tea/coffee… Bon appetit 🙂

Tips & Tricks :-

  • Use medium ripe Plantain. If it is too ripe, you wont be able to make patties and also it will absorb more oil while frying. If the banana is under ripe, it won’t taste as good.
  • Mashing the plantain to smooth is very important to make perfect shape without breaking.
  • Coconut oil is used traditionally to fry the kayi ada, you can use your preferred oil though.
  • Kayi ada/Unna kayi is freezer friendly snack, which can be stored in the freezer for a week or two. If you are freezing thaw before frying.
  • You can add grated coconut with egg mixture or avoid egg and use only coconut for vegetarian version.
