Ingredients

Adjust Servings:
For Grilled chicken
150 g Chicken Breast
1 Tea spoon Ginger Garlic Paste
1/2 Tea spoon Chili flakes
1 Tea spoon Lemon juice
1/2 Tea spoon Dried Oregano
Salt to taste
2 tea spoon Oil
Tahini Dressing
3 Table spoon tahini
From half lemon Lemon juice
Salt & Pepper to taste
1 Clove Garlic
1 Tea spoon Honey
1/2 Tea spoon Dried Parsley
3 Table spoon Water
2 Tea spoon Olive oil
For salad
1/2 Cup cubed Capsicum/Bell Pepper
seeds 1/2 Cup Pomegranate Seeds
1/2 Cup cubed Tomato
1 Cup cubed Cucumber
1 Cup roughly chopped Lettuce
1/2 cup Black Olives (Pitted)
1 Table spoon pumpkin seeds
1 Table spoon Sunflower Seeds
2 Table spoon Black Raisins

To grill the chicken

  1. Take all the ingredients for marinating the chicken in a bowl.
  2. Rub well and keep aside minimum for 30 minutes.
  3. Heat a grilling pan/iron pan and drizzle oil and add marinated chicken.
  4. Cook one side for 10 minutes on a medium flame.
  5. Flip them over, cover with a lid and cook again for another 10 minutes.
  6. Transfer to a plate and thinly slice them.
  7. Keep aside.

Prepare Tahini dressing

  1. In a bowl take all the ingredients for dressing except water and mix together well.
  2. Then add water little at a time and give a good mix  and make a homogeneous mixture.
  3. Keep them aside.

To prepare the salad

  1. In a bowl take all the veggies and toss them.
  2. Add prepared tahini dressing and give them a good mix.
  3. Next add in sunflower seeds, pumpkin seeds and raisins and mix again.
  4. Finally add in sliced grilled chicken and combine with the salad.
  5. You can serve them right away.

Tips & Tricks

  • You can use any left over chicken for the salad.
  • Vegetarians can substitute chicken with other vegetarian alternatives like, grilled tofu, tempeh, paneer etc.
  • Use your choice of nuts, seeds or dried fruits.
