Ingredients

Adjust Servings:
6 Egg
2 Cups + 2 Table spoon (460g) Sugar
1/2 Tea spoon Cardamom Powder
1/2 Tea spoon Salt
20 Table spoon (You can mix ghee and oil together as well) Ghee (Clarified butter)
5 Cups (650 g) All purpose flour
For Deep frying Oil

This recipe makes around 100 small size Fried cakes! Number really depends upon the size of the dough you take to fry!

Prepare the dough

  1. Take Egg, Sugar, Cardamom powder and salt in a blender.
  2. Blend them for about 1 to 1.5 minutes (Not more than that). If you blend them for long, cake will become more softer.
  3. Take them to a big mixing bowl.
  4. Then add ghee + oil and mix to the batter and mix.
  5. Now slowly incorporate the flour to the batter. You should not add all the flour at once. You may need little less or more as per the flour’s absorbency.
  6. We need to get non sticky soft dough as shown in the video.
  7. Transfer the dough to the oil greased bowl, cover with a towel and leave them for about 2 hours on your counter top.

Fry the cake

  1. Heat oil in a deep bottom pan to fry the cake.
  2. Take 1 tea spoon of dough (or as you desire) and make small balls out of it.
  3. Fry the prepared dough on medium to low flame. If you fry them on high heat, outside of the cake will get dark soon and inside will be raw. (Since we used lot of egg in the dough, oil will become foamy. you don’t need to worry).
  4. When the cake cool downcompletely, you can store them in an airtight container upto a week or two.
