Sweet Kalathappam – A traditional rice cake, all the way from North Malabar. I have already shared Unsweetened version of Kalathappam. This dish always make me feel so homely. They are perfect with your evening cup of Coffee/Tea. And if you are a sweet person for breakfast like me, they can make a perfect breakfast too.
You can prepare this exotic rice cake with very minimal ingredients and very easily. Rice and jaggery is the main ingredient of this recipe. Did you notice most of the Kerala special snacks and desserts are sweetened with jaggery?? That caramely flavor enhance the taste of our sweet dishes. Addition of shallots/pearl onion and chopped coconuts are the highlight of this cake. They give exotic flavor to our kalathappam. I love when we get coconut bites in between soft Kalathappam. Don’t avoid coconut and onion while you make this sweet kalathappam.
This is a no fail recipe, you can always get perfect kalathappam with those beautiful lines if you follow measurement and instruction correctly. We always used to prepare them in Pressure cooker without pressure button.

Making granola at home is as easy as 1,2,3. Yes you just need to dump all the ingredients in a bowl & mix, bake them and devour. This cranberry granola is crunchy, healthy and super delicious.
I have loaded them with almonds, sunflower seeds, pumpkin seeds, chia seeds and cranberry. But you could swap them as per your preference. I will strongly recommend adding coconut to this. The smell of toasted coconut really added so much flavor to the granola. May be because I am tropical girl, coconut to anything will impress me well.
If you got bored of making and having oats as a porridge for breakfast, this granola will give an interesting twist.
It serve as a protein rich breakfast – as cereal or with some yogurt, sour cream or clotted cream. You could top them with your ice cream and simply much on as a snack as well.
A classic dutch treat, fluffier mini pancakes are foolproof and easier recipe for weekend breakfast or brunch.They made with regular flour and buck wheat flour, used yeast for fluffier texture and simply served with generous amount of softened butter and powdered sugar. A breakfast couldn’t be easier and tastier than this – hmmm not exaggerating guys, they are soo good. Do try once.
We have been to Amsterdam Recently (what a beautiful place to be – one of the place where we wanna go back again!! May be i will write about it in detail in some other post!). And first thing I wanted to try from there was mini cute Peffertjes. As a foodie, before we go, I read about Amsterdam cuisines and dishes I could try from there and made sure we tasted most of them from the native place. We got to try them from Albert Cuyp market, which was recommended by a shop keeper lady in Amsterdam. We had no plan to go to the market, but I very much wanted to taste it and we couldn’t get it from Amsterdam Central, we decided to go there.
Poffertjes are traditionally made in cast iron Poffertjes pan, which has a dozen of cavities. Since I was not owing them, I used our “Karayappam chatti/Unniyappam chatti” (Pan which used to make Kerala’s own snack- Unniappam) which has more deeper cavities than Poffertjes pan. I filled them half way, so that I can get some what similar shape of it.
You can also substitute buck wheat flour with all purpose flour alone, if it is not available.
If you wanna serve Poffertjes more romantic and glamorous way 😉 top them with whipped cream and few red & sweet strawberries. Or some fruit jams and fresh cream would be a great idea too. Why not some drizzles of chocolate sauce??!! Serve them your favorite way guys. But don’t forget to try good old traditional way of butter and powdered sugar. Dolma is one of the very popular dish in Central Asia, Eastern Europe and middle east. Grape leaves stuffed with meat and rice filling, lightly spiced and cooked to perfection. Other veggies like Zucchini, bell pepper, cabbage, eggplants are also used instead of grape leaves. I became fan of Dolma after coming to Tashkent. All these years, from UAE, I never dared to taste Dolma, somehow in my mind that was some weird snack, which is not suitable for my taste buds.
Once my friend here brought me piping hot Uzbek dinner, two types of Dolma (with grape leaves and bell pepper Dolma) and Uzbek Samosa and some sweets. When I opened the box first I saw was grape leaves Dolma. My face became 🙁 immediately. Hubby started eating that one after another. I just looked at him and asked – is it that tasty you are enjoying it like anything??! In my life, first time I tasted Dolma on that day!!! Since then I decided never prejudice anything as I did with Dolma!!! Sorry Dolma for underestimating you 😀
I was waiting for summer to get fresh grape leaves. You can also use canned vine leaves which will be available in most of the Middle eastern/Asian stores. You can also get them online.
Filling can be adjusted as per your family preference. It can make without meat for Vegetarian/vegan version. Carrots, minced cabbage, mushrooms etc can also be used. There is no strict rules how the filling should be.
I cooked Dolma with Chicken stock which I had in my fridge. It definitely enhanced over all flavor. Dolma with dollop of sour cream were sooo good, as we enjoyed it for our Iftar. It can be used as snack/appetizer or serve it as your dinner.
If you had pre-judged Dolma as I did, I strongly recommend you to try this at least once. Lemme know how you enjoyed them.
Breakfast without egg…..I feel like incomplete!!! And anything with cheese – written my name on it. Further more, make a head breakfast!!! yes please…. nothing makes me happier than that. Easy and super delicious egg and cheese rolls have everything I said above.
Fluffy scrambled egg and melted cheese with delicious french sauce – bechamel sauce (white sauce) is a pure bliss. Rolled them in crepes which is flavored with chopped parsley. All in all, they will simply melt in your mouth. Best part is they freeze really well. Just you need to fry them or pop them into the oven before serving. You can also add bit of chopped ham or sausages if you like. Sun dried tomatoes also would have given a flavor punch, I had no stock so didn’t use them. If you love its taste, go ahead and add some.
Whats say about breakfast for dinner??? This rolls goes well along with your soups as well. No big deal, this can be served at any time of the day. We both loved them to the core, hope your family would enjoy them too. Lets see the recipe….
Salads holds its own place on any festive/party table at any time of the year….Isn’t?? This salad got its name from Russian name of the yellow spring flower tree called “mimosa”. This is popular in all former soviet states and can be prepared with pretty common ingredients available in every kitchen.
This colorful and unique looking salad – mimosa attracted me when we were invited by an Uzbek friend. I always used to amaze how people over here arrange their table with different varieties of tasty salads,starters, nuts and sweets when receiving a guest. Totally different food culture from ours. They take us directly to the dining table , where they would keep everything ready on table before we arrive. We talk, eat and entertine there itself. In between soups, main course and desserts will be served. Soup and main course normally seen served only one item, where as back home in India we serve as many varieties of main dishes as possible ;-).
Coming to the recipe, they are pretty simple, layering tuna, cooked veggies and egg with mayonnaise. Here I prepared a dressing instead of mayonnaise, using sour cream. A delicious substitute for mayo. You can either use mayonnaise or the dressing which I have given below, which is bit more healthier version. If you are not a fan of tuna, cooked/tinned chicken or turkey can be substituted. But I guess tuna gives a unique taste for this salad. You can also add onion and hard cheese if you prefer.

And this 250 dollar cookies from Neiman Marcus really hooked me!! You might be thinking why 250 dollar cookie??!! Yea there is a story behind this cookie recipe. You might have read about this cookie in internet. Here is the story in short…. A woman visited “Neiman-Marcus Cafe” in Dallas and ordered a dessert after her dinner — the Neiman Marcus cookie. The woman was so enthralled by the delicious cookie that she asked an employee at the cafe if she could have the recipe. When the employee declined, the woman asked to purchase the recipe, and was told that it would cost her “two-fifty.” When the woman received her VISA statement a month later, she’d been charged $285 — $10 each for two salads, $20 for a scarf, and $250 for the famous cookie recipe. She was ready to pay thinking that its 2.50 $. Hence the name 250 dollar cookie. Read more about itHere ). Don’t know whether this story is true or not, but cookie is absolutely delicious.I came across this cookie while rolling through Pinterest. The story really attracted me and when I read the reviews, I decided to give it a try. Made it couple of times now. We both really enjoyed it by dunking in cold milk. What make this cookie special from other oatmeal cookie is that, we are grinding the oats to coarse powder instead of adding whole oats to the batter.A portion of Chocolates are added ground or grated too.
When we were invited for a dinner by hubby’s one of colleague, I made a batch of this oats and chocolate chip cookie for them. The very next day she sent me message asking for the recipe saying that its very tasty cookie!!I am sure you gonna make a second batch of this cookies.
This became our favorite cookie since I made, Hope you too gonna love it. I strongly recommend you to try at least once. Be sure to use good quality chocolates.
Do you know why I love minced meat?! They are so versatile and gets cooked easily. Throw in some simple ingredients and you are good to go. This easy filling which I made is very delicious and can have by its own, or side to any other bread or even rice.
When I asked hubby to get spring roll sheet,he bought a bunch of lavash. I wanna use up those, hence decided to try this way. It didn’t go wrong. light crispy exterior and flavorful and juicy meat paired very well. You can also use your Home made pastry leaves or Store bought spring roll sheet. Making simple Crepes and fill this minced meat masala would be great idea too. Make a big batch and freeze it…Isn’t that so cool?!

This is my first ever post for MFB monthly challenge and the theme is “Ramadan memories”. Thank you so much Rafeeda letting me know about this group and events!! I would have chosen something with plantain as ramadan’s most memorable snack, but unfortunately I can only dream of preparing plantain snacks here 🙁 , plantain not available here.Then came to my mind was famous and very own Malabar snack – Chatti pathiri. We make it both sweet and Savory versions. For sometimes I was thinking to make sweet chatti pathiri with a twist to usual egg filling. And finally here it is – Layered with apple and recotta/farmers cheese.
In malabar which Iftar table will pass without chatti pathiri atleast once?!They can be prepared easily and very filling too. And this version of mine was absolutely delicious. Apple and recotta with hint of cinnamon really paired well! And those ghee fried cashew gave our kerala touch. You just need to prepare the filing and crepe, then layer and cook in very low flame!!
Fatayers are famous middle eastern snacks prepared with pizza dough filled with different delicious fillings. Meat, spinach and cheese fillings are commonly used. As promised here is my fatayer recipe.I have made Spinach and feta combination and it became our favorite filling now for fatayer.
By making all lots of non veg items for Iftar, I thought of giving a vegetarian touch to my Iftar table. Vegetarian savory dishes pop up very rarely during this month here. So I thought spinach is by all means a healthy choice.Spinach filling paired very well with my Homemade Pizza Doughas well. Hubby is not a Pizza fan, but this little spinach triangle pie disappeared easily from here.
Addition of feta cheese really took the taste to the next level, those toasted walnuts added the crunch.These are not loaded with spices, so it was very comforting savory snack for Iftar!!
After my third attempt, I got those pies unopened after baking!! It’s really very important to squeeze out the moisture from the spinach and make it dry. Otherwise by the time your pies are baked … all those naughty little ones would have opened… haha….I was able to eat those…but were not good enough to present in front of you guys ;). Do you know I was waiting near the oven very curiously to see whether they are being naughty again!!! Childishness in me came out when I made this. It was funny too!
So squeeze spinach as hard as possible….. it will be a stress buster exercise tooo ;-). Don’t worry, follow exactly all steps as given…You can also make half-moon shaped pies, that would be really easy in fact, you can follow the steps here. Prepare the Pizza Dough and keep it ready or you can use store-bought as well.
Add little salt to chopped spinach and keep aside for 10 to 15 minutes. Then take the spinach in muslin cloth and squeeze out the water from it.
In pan add chopped walnut and dry roast until just it changes color slightly.
Heat oil in the same pan, add chopped onion and grated garlic, saute until onion became translucent.
In a bowl add spinach,sauted onion,parsley,cumin,chilli and mix well.
Then add in crumbled feta cheese and walnut. Add salt and pepper to taste (remember you already added salt in spinach, so add if only require).
Preheat your oven at 180 ° C.
Now roll the pizza dough about 1/8 inch thickness and cut using around 4 inch diameter cutter. (Please keep unrolled dough close with kitchen towel to prevent from drying out)
Now add 1 tea spoon filling at the centre of the cut dough (make sure not to touch the filling on the sides where you gonna punch together. If your filling touches the edges it will be difficult to stick together and will open up while baking).
Now bring together two sides of the dough until centre and take third portion and pinch towards centre. You will get a triangle shape as in the picture.Close them and punch them firmly and well. Repeat the process with rest of the filling and dough.
Place prepared fatayer on baking sheet.
Beat the egg with a tea spoon water, brush it evenly on top of prepared fatayer (Egg wash gives shining and nice golden color).
Bake it in the preheated oven for about 20 minutes until bottoms are lightly golden color. Then turn the grill/broiler mode and keep for 3 to 4 minutes just to get the golden brown color.(don’t keep more, it may tend to burn).
Tips & Tricks :-
It’s really very important to squeeze out excess moisture from the spinach.
