Sweet Kalathappam – A traditional rice cake, all the way from North Malabar. I have already shared Unsweetened version of Kalathappam. This dish always make me feel so homely. They are perfect with your evening cup of Coffee/Tea. And if you are a sweet person for breakfast like me, they can make a perfect breakfast too.

You can prepare this exotic rice cake with very minimal ingredients and very easily. Rice and jaggery is the main ingredient of this recipe. Did you notice most of the Kerala special snacks and desserts are sweetened with jaggery?? That caramely flavor enhance the taste of our sweet dishes. Addition of shallots/pearl onion and chopped coconuts are the highlight of this cake. They give exotic flavor to our kalathappam. I love when we get coconut bites in between soft Kalathappam. This is a no fail recipe, you can always  get perfect kalathappam with those beautiful lines if you follow measurement and instruction correctly. We always used to prepare them in Pressure cooker without pressure button.

This butter cake recipe is there in our family for ages now. My sister has been baking this cake ever since I remember and never heard of it failed. They are soo buttery rich, soft and moist and perfect with your evening cuppa.

You need very basic ingredients for this cake and can be whipped in less than 20 minutes. If you want you can use frosting, but we always have them plain with our tea.

Sometimes we add chopped nuts and dried fruits. Cashews and chopped dates are our favorite addition to this cake.  I have showed how to bake them without oven, but oven baking instructions as well given. Butter cake without oven (Vanilla cake recipe)

Now coming to the recipe!

When you have extreme chocolate carving and that over ripe banana is spreading its aroma in your kitchen and saying “I am gonna expire very soon” ;-), how can you not make this incredibly moist, soft and tender double chocolate muffins?? Haa they can put together within no time as well. Just mix all the ingredients and you are good to go!!

They are sooo chocolaty since we are using cocoa powder and chocolate chunks. Roasted oats flour gives nice nutty flavor and I don’t need to tell you about the flavor ripe banana gives. All together perfect combination of all the ingredients.

This recipe caught up a good place in my favorite recipe list, we never got bored after baking these muffins 3 weeks in a raw. Chocolate banana muffins makes breakfast very interesting and make best pair with your evening cup of coffee too. Melt in your mouth eggless vanilla butter cookie is super easy to put together. Holiday season is at full swing and this is the best time to bake. Here in Tashkent as well streets and all the households are in celebration mode already.I couldn’t believe how busy market were yesterday, everyone is collecting and packing gifts. You can anytime expect guests these days right?? Stocking up your pantry with some baked goodies gives so much relaxation. Believe me this Vanilla shortbread cookie you can whip at the last minute without making much mess and you gonna get lots of praise from your friends and family.

I have been baking this cookie for years now and it never used to make me fail. We both loveeeee this shortbread cookie and it never last more than two days here. Butter cookie is perfect to gift, I made a big batch of this cookie to gift Hubby’s friend and they too loved it soo much. These cookies are eggless, utterly buttery and simply melt in your mouth. Mini Red velvet cake

Mini Red velvet cake with white chocolate cream cheese frosting

Red and velvety, classic chocolate cake will attract anyone with its look and most delicious taste. White chocolaty, creamy and cheesy frosting pair very well with these beautiful spongy cake. Believe me, they will simply melt in your mouth!!

Even though I have a very big sweet tooth, cake is not my thing. I hardly finish one serving of cake at a time. Hubby also usually won’t go beyond a piece of cake exception to this cake😄!! So I usually wait for very special Occassion to bake something like this!All thanks to my friend Rayida, who is a hands down home baker and her cake pictures inspired me a-lot. (I didn’t get a chance to taste her cakes yet!!). When I went home last time, she pushed me to attend a one day baking workshop, it was a good demo and got more idea on the area where I was least experienced. So for new year, I thought to bake a big fat cake to share with my neighbors and friends. But I couldn’t bake due to our short trip to Delhi around new year, which was unplanned!

On the day of New year, hotel where we stayed kept a counter with alot of pastries and cakes. I told hubby I couldn’t bake as I planned….let us indulge in some sweet treat here. so we bought one red velvet cake slice. After putting first spoon in my mouth,I was like “whether to cry or laugh”….ohh god, cake was tooo dry and tasteless….. how can a prestigious hotels serve these kind of cakes??!! totally disappointed with them 🙁 ….. Coming back to Tashkent, I decided to try red velvet cake….. in a miniature form, and anything miniatures, I feel they are the cutest!!! They are so easy and convenient to serve as well ….aren’t they??? I am so happy that I did try them….. they were sooooooo delicious and he had one, two and asked for the third serving at the same go 😄!!! Me, who is not a cake person had half batch of them…. shhhh 🤫….. We had them after breakfast, lunch and dinner as well 😉…..not joking guys, we really did!!!

The cake where really soft and moist. When it sandwiched with the white chocolate cream cheese frosting, you will feel like you are having white chocolate cheesecake with cake base!!! Jan already half way through….can you believe it?!Days are simply flying!!!! I am so late for the first post for the year 2018 huh?!! But glad that I showed up 1st month itself. Our unexpected and unplanned short holiday trip, and its hangover took these while for me to back on track again.Hope you all had wonderful holidays!Here I am with our current favorite, white chocolate and cranberry muffins.

I was feeling to Bake more and more on these wintery days. There is nothing cozy than a hot cup of tea and some baked goodies these evenings. And the day you baked something, your home will smell amazing…..I do enjoy that a lot –  one among the sweet little happiness of the home bakers.

Tender muffins with sweet & tart cranberries and white chocolate, with hint of orange zest….mmmmm they were sooo good! I am addicted to those fragrance of citrus fruits. I am telling you, you won’t be stopping this at one. I had before, during and after clicking the photos….don’t take me wrong, it was my lunch on that day hehe…..No wonder why I am struggling to stay in shape 😉 …. some of the days my lunch used to be with these kind of stuff ;-)….I don’t really cook for myself, if there is nothing left over for lunch….

weekend lazzy breakfast can be handled peacefully if I Bake muffins/pound cakes on Fridays, and it will run through out the week to suppress your little hunger anytime of the day too. Late night hunger of him after having early dinner also will be sorted out with these. Best part of baking these muffins are, they can be whipped up in just 15 minutes. You don’t need to take out all those mixers, just a bowl and spatula will do the work. As simple as mixing dry to the wet. Since I used dry cranberries, these can be prepared throughout the year and you can get dried cranberries every where now a days. Blueberries also would be great alternative to it.

Eclair with hazelnut praline custard

You all might have started planning and preparing for upcoming holidays, and no table will complete without those baked goodies.These classic french dessert – eclairs for sure will attract all those sweet tooths.  They are made out of choux dough and filled with custard and topped with chocolate ganache. Eclairs are one of my favorite pastry and I enjoy making and indulging in it. Usually I used to prepare them with vanilla custard and this time I have used my favorite ever, most delicious Hazelnut praline Custard /Pastry cream  Ohhh, they were soo beautiful marriage of yumminess!!

Unsweetened pastry with moderately sweet hazelnut pastry cream and topped with chocolate ganache – can that go wrong?!The pastry will puff up with that hollow inside to fill the cream. This combination was there in my mind for quite sometime and finally I am happy it happened.  You don’t need to do everything on the same day. What I did was, prepared my pastry cream previous day so that it can get chilled well. Next day prepared the pastry and when they were cooling down, made the chocolate ganache.

Its pumpkin pumkin everywhere now!! How can someone resist experiment with these nutritious goodies?!! I love and love anything with pumpkin, being it  sweet or Savory. Pumpkin pie is not something which I was grown up with or my childhood favorite, but its in my current favorite list and will be there forever from now on!!!

The flaky crust and smooth and luscious filling is simply amazing. Made pie filling from scratch. Its super simple to make. You just simply need to pop pumpkin/butternut squash in the oven, bake till it is soft and make puree. Add your choice of spices and rest of the ingredients in food processer and your pie filling is ready!!!

Contrary to the traditional pumpkin pie, I have kept some hidden yumminess in between crust and pumpkin filling 😉….coconut and cashew mixture, to give slight crunch and nuttiness!! The crust I used here is my favorite one, which I used for my Dulce de leche cheese cake as well.

Hubby’s colleague sent me alot of butternut squash from his own vegetable garden. I was literally celebrating with them all these days 😄.

Don’t forget to grab some pumpkin and try this recipe if you are a pumpkin lover like me 😋, you don’t need a special occassion to make this…. If you are less member family like me, freeze the left over….it will stay there for more than a month!!

I made Financiers with left over egg whites. You can use them for coating while making spring roll or freeze them until you find a appropriate recipe.

Are you a cookie person??? Which type of cookies are your favorite?? I am a crispy, crunchy cookie person, which we can dunk into tea,coffee or milk. And this 250 dollar cookies from Neiman Marcus really hooked me!! You might be thinking why  250 dollar cookie??!! Yea there is a story behind this cookie recipe. You might have read about this cookie in internet. Here is the story in short…. A woman visited “Neiman-Marcus Cafe” in Dallas and ordered a dessert after her dinner — the Neiman Marcus cookie. The woman was so enthralled by the delicious cookie that she asked an employee at the cafe if she could have the recipe. When the employee declined, the woman asked to purchase the recipe, and was told that it would cost her “two-fifty.” When the woman received her VISA statement a month later, she’d been charged $285 — $10 each for two salads, $20 for a scarf, and $250 for the famous cookie recipe. She was ready to pay thinking that its 2.50 $. Hence the name 250 dollar cookie. Read more about itHere ).  Don’t know whether this story is true or not, but cookie is absolutely delicious.I came across this cookie while rolling through Pinterest. The story really attracted me and when I read the reviews, I decided to give it  a try. Made it couple of times now. We both really enjoyed it by dunking in cold milk. What make this cookie special from other oatmeal cookie is that, we are grinding the oats to coarse powder instead of adding whole oats to the batter.A portion of Chocolates are added  ground or grated too.

When we were invited for a dinner by hubby’s one of colleague, I made a batch of this oats and chocolate chip cookie for them. The very next day she sent me message asking for the recipe saying that its very tasty cookie!!I am sure you gonna make a second batch of this cookies. 

This became our favorite cookie since I made, Hope you too gonna love it. I strongly recommend you to try at least once. Be sure to use good quality chocolates.

Dessert is always my weak area and I may avoid my main meal to dig in to the dessert and fill my tummy with those deliciousness. Cheesecake is in my top favorite desserts, love those creamy lusciousness with mildly sweet crust. Have you checked my absolutely delicious Dulce De Leche Cheesecake?

Do you know why I love this white chocolate cheesecake soo much??!!They are so incredibly delicious ,easy to make,Creamy and simplyyyy melt in you mouth, I can make this ahead and more over, its No Bake Cheesecake tooo!!!!. There is no gelatin added. Hmmm what I poured on top to get that tangy balance……yes my favorite Lemon Curd. No mood for lemon curd??!! Top it with your other favorite fruit topping or Simply opt it out guys…. it taste great by its own! Please use good quality eating chocolate if you wish to get best cheesecake (No baking chocolate please).

I made this cheesecake when we invited my friend and family here for dinner and we simply enjoyed it to the bit. When we plan for inviting someone here, first thing I will start thinking is “What I will make for dessert”?!!! and I always make something which I can make a day or two ahead. There are two reason why I wanna make it ahead of time –  One if at all dessert experiment is failing, I have enough time for plan B 😉 and second is next day I can completely spend my time on main meal (which mostly I make Indian meals, as I wanted to introduce our Indian cuisines to Uzbek guests).

This pictures were clicked in hurry just an hour before guest arrive and sun was about to set too, somehow managed to get few clicks. You might be thinking why can’t I make those desserts some other day when no guests and take pictures. If I make those delicious goodies for our 2 member family, hubby will take only a slice or at the most second slice next day!! Finally I will end up indulge in it and finish off all those without any doubt! But weighting scale won’t show mercy on me guys ;-), huh I put on weight soo fast :(.  I envy those ladies who dig in so much and still maintain their curves :(. Anyways it taste soo great than it looks for sure!!! Ingredients are very easily available and no much fuss too!
