Sweet Kalathappam – A traditional rice cake, all the way from North Malabar. I have already shared Unsweetened version of Kalathappam. This dish always make me feel so homely. They are perfect with your evening cup of Coffee/Tea. And if you are a sweet person for breakfast like me, they can make a perfect breakfast too.
You can prepare this exotic rice cake with very minimal ingredients and very easily. Rice and jaggery is the main ingredient of this recipe. Did you notice most of the Kerala special snacks and desserts are sweetened with jaggery?? That caramely flavor enhance the taste of our sweet dishes. Addition of shallots/pearl onion and chopped coconuts are the highlight of this cake. They give exotic flavor to our kalathappam. I love when we get coconut bites in between soft Kalathappam. Don’t avoid coconut and onion while you make this sweet kalathappam.
This is a no fail recipe, you can always get perfect kalathappam with those beautiful lines if you follow measurement and instruction correctly. We always used to prepare them in Pressure cooker without pressure button.

Making granola at home is as easy as 1,2,3. Yes you just need to dump all the ingredients in a bowl & mix, bake them and devour. This cranberry granola is crunchy, healthy and super delicious.
I have loaded them with almonds, sunflower seeds, pumpkin seeds, chia seeds and cranberry. But you could swap them as per your preference. I will strongly recommend adding coconut to this. The smell of toasted coconut really added so much flavor to the granola. May be because I am tropical girl, coconut to anything will impress me well.
If you got bored of making and having oats as a porridge for breakfast, this granola will give an interesting twist.
It serve as a protein rich breakfast – as cereal or with some yogurt, sour cream or clotted cream. You could top them with your ice cream and simply much on as a snack as well.

When you have extreme chocolate carving and that over ripe banana is spreading its aroma in your kitchen and saying “I am gonna expire very soon” ;-), how can you not make this incredibly moist, soft and tender double chocolate muffins?? Haa they can put together within no time as well. Just mix all the ingredients and you are good to go!!
They are sooo chocolaty since we are using cocoa powder and chocolate chunks. Roasted oats flour gives nice nutty flavor and I don’t need to tell you about the flavor ripe banana gives. All together perfect combination of all the ingredients.
This recipe caught up a good place in my favorite recipe list, we never got bored after baking these muffins 3 weeks in a raw. Chocolate banana muffins makes breakfast very interesting and make best pair with your evening cup of coffee too. This makes best after dinner/lunch dessert as well.
They freeze very well. You just need to reheat them in microwave and enjoy!
A classic dutch treat, fluffier mini pancakes are foolproof and easier recipe for weekend breakfast or brunch.They made with regular flour and buck wheat flour, used yeast for fluffier texture and simply served with generous amount of softened butter and powdered sugar. A breakfast couldn’t be easier and tastier than this – hmmm not exaggerating guys, they are soo good. Do try once.
We have been to Amsterdam Recently (what a beautiful place to be – one of the place where we wanna go back again!! May be i will write about it in detail in some other post!). And first thing I wanted to try from there was mini cute Peffertjes. As a foodie, before we go, I read about Amsterdam cuisines and dishes I could try from there and made sure we tasted most of them from the native place. We got to try them from Albert Cuyp market, which was recommended by a shop keeper lady in Amsterdam. We had no plan to go to the market, but I very much wanted to taste it and we couldn’t get it from Amsterdam Central, we decided to go there.
Poffertjes are traditionally made in cast iron Poffertjes pan, which has a dozen of cavities. Since I was not owing them, I used our “Karayappam chatti/Unniyappam chatti” (Pan which used to make Kerala’s own snack- Unniappam) which has more deeper cavities than Poffertjes pan. I filled them half way, so that I can get some what similar shape of it.
You can also substitute buck wheat flour with all purpose flour alone, if it is not available.
If you wanna serve Poffertjes more romantic and glamorous way 😉 top them with whipped cream and few red & sweet strawberries. Or some fruit jams and fresh cream would be a great idea too. Why not some drizzles of chocolate sauce??!! Serve them your favorite way guys. But don’t forget to try good old traditional way of butter and powdered sugar. Vatrushka is cheese topped buns, one of the most popular breakfast item here in Tashkent. Every cafes and bakery section of super market here,you can see vatrushka. One among the snack/breakfast item they prepare using farmers cheese (tvorog). I have already shared some of the russian/uzbek recipes with farmers cheese. Vatrushka is cheesecake in soft and fluffy buns…..aren’t that sounds interesting??!! It really taste great and it makes a filling breakfast too.
All the ingredients are very easily available and can be prepared without much hard work.My friend Nazeema (hubby’s colleague’s wife) who shared this recipe with me (a bunch of recipes she shared with me actually), very long time ago. Was keeping on postponing it because hubby is not a big fan of yeast breads.
When I saw MFB challenge this month subject as “breakfast” item, did not think much. Every month used to try to participate for the challenge, but one or other reason, I fail to post anything on those days. I am glad that this month it’s up.
Usually cheese filling used to be plain, without any dry fruits addition. Lemme tell you, apricot very well take the cheese filling to the next level. They really complement each other. If you can’t find farmer’s cheese, cream cheese,cottage cheese or ricotta cheese can be substituted. Apricot can be substituted with raisins,dried cherries,cranberries etc.
You don’t need to wake up early morning to prepare Vatrushka. I have prepared the dough night before and refrigerated it. Only filling and assembling I did it on the next day.
Breakfast without egg…..I feel like incomplete!!! And anything with cheese – written my name on it. Further more, make a head breakfast!!! yes please…. nothing makes me happier than that. Easy and super delicious egg and cheese rolls have everything I said above.
Fluffy scrambled egg and melted cheese with delicious french sauce – bechamel sauce (white sauce) is a pure bliss. Rolled them in crepes which is flavored with chopped parsley. All in all, they will simply melt in your mouth. Best part is they freeze really well. Just you need to fry them or pop them into the oven before serving. You can also add bit of chopped ham or sausages if you like. Sun dried tomatoes also would have given a flavor punch, I had no stock so didn’t use them. If you love its taste, go ahead and add some.
Whats say about breakfast for dinner??? This rolls goes well along with your soups as well. No big deal, this can be served at any time of the day. We both loved them to the core, hope your family would enjoy them too. Lets see the recipe….

I was feeling to Bake more and more on these wintery days. There is nothing cozy than a hot cup of tea and some baked goodies these evenings. And the day you baked something, your home will smell amazing…..I do enjoy that a lot – one among the sweet little happiness of the home bakers.
Tender muffins with sweet & tart cranberries and white chocolate, with hint of orange zest….mmmmm they were sooo good! I am addicted to those fragrance of citrus fruits. I am telling you, you won’t be stopping this at one. I had before, during and after clicking the photos….don’t take me wrong, it was my lunch on that day hehe…..No wonder why I am struggling to stay in shape 😉 …. some of the days my lunch used to be with these kind of stuff ;-)….I don’t really cook for myself, if there is nothing left over for lunch….
weekend lazzy breakfast can be handled peacefully if I Bake muffins/pound cakes on Fridays, and it will run through out the week to suppress your little hunger anytime of the day too. Late night hunger of him after having early dinner also will be sorted out with these. Best part of baking these muffins are, they can be whipped up in just 15 minutes. You don’t need to take out all those mixers, just a bowl and spatula will do the work. As simple as mixing dry to the wet. Since I used dry cranberries, these can be prepared throughout the year and you can get dried cranberries every where now a days. Blueberries also would be great alternative to it.

Nombu Kanji (‘Nombu’ means fasting and ‘Kanji’ means porridge, in my mother tongue – Malayalam) is one of the comforting and unavoidable dish to make during Ramadan. That aroma of roasting green gram itself is the smell of Ramadan for us!! When I made this yesterday, missed so much those days of Ramadan with Family!
This very delicious porridge, can be prepared easily. Cooking roasted green gram with rice and finally adding the coconut milk to make it rich and delicious. Back home we get a lot of coconut, so we use coconut milk while making this. Here when I make, I used to add half regular milk and half coconut milk. Sometimes I make regular milk alone. Both the ways, it’s very delicious and comforting.
Crepes are so versatile, pair very well with both sweet and savory fillings. One of my very easy to go breakfast item is crepe filled with anything which I have handy. Doesn’t it make so relaxing & happy when you make something quick and delicious serve it on the breakfast table?? Believe me this chocolate crepe filled with cream and fruits are really heavenly combo and very filling too.
Batter will be ready in no time and it takes less than a minute to assemble. The dulce de leche and clotted cream will simply melt in you mouth, and strawberry and banana enhance the taste with all its goodness. Furthermore all those pair well with chocolate crepe….yummmmm!
I would say this can be served as a dessert item too or when your loved one comes with hungry anytime of the day!!Add your favorite combination of seasonal fruits….a good way to include fruits in you breakfast too.Make big or small crepes as you prefer and serve it with a cup of coffee or tea.
Here is easy and delicious another breakfast item, again with farmers cheese(Tvorog). In russian its called “Syrniki”. This pancake is very popular here. Commonly prepared in every household. I love to make this because it makes mess free breakfast and tasty too.I also made another breakfast item with farmers cheese – Farmer’s Cheese Cake (Breakfast Cheese Cake) .
I got this recipe from a hotel’s kitchen ;).. yes! When my Brother and family visited us here, we went to Bukhara (a famous historical – tourist destination in Uzbekistan). It was on friday, after checking out from hotel, hubby and bro went for friday prayer. We waited them on lobby. Since kids were there….we don’t want to sit in the car. On that day for breakfast buffet, they also served this tasty pancake. When I got a chance to talk with a lady there, I asked about this. She took me to their kitchen and showed me each ingredients and method. They were very happy and proud that I asked them for the recipe. She also wrote it in a paper in russian :).
It’s not complicated recipe and any starters can make this easy pancake. You can always substitute farmers cheese with ricotta or cottage cheese. Farmer’s cheese texture is much drier than cottage cheese. So make sure to drain of the excess water if it has.
