Panineer Petti (Crepe stuffed with sweetened mixture)

Hey all…..Its been a month i am away from blogging world. Was on veccation. Went home….as you all know,was busy every single day there!! Now back to pavalion…..started normal routine!

By the way….belated happy new year to all!! 1st post of 2016….so thought,I will start with a sweet dish…..a malabar sweet snack…. “panineer petti” (panineer means rose flower and petti means box). This snack has got a shape of box, but i dont know why they gave name panineer…..i guess may be the layers are so soft and tender as rose petals(this is just my own guess ;)). Other than that, it doesn’t have any connection with rose flower.


Panineer petti is usual item on iftar table, or evening snack. This easy item can be made for your kids as after school snack. I also served this soft and tender sweet box for my guest as a dessert after lunch and dinner party here, and they really loved it.

Ingredients for panineer petti will be easily available in your pantry and can be made within no time. Thin crepes are filled with egg-coconut sweet mixture and chopped cashew for crunchiness, then flavoured with cardamom powder. Served with sugar syrup for extra sweetness!! It can be made without coconut also. But I love the taste of coconut in it.

Lets see how its made….

Ingredients :-

For crepe :-

  1.  Flour – 5 table spoon
  2. Egg  – 1
  3. Water – 1/2 cup
  4. Milk  – 1/2 cup
  5. Melted butter/oil – 2 tsp
  6. Salt -a pinch

For filling :-

  1. Egg – 2
  2. Coconut – 3 table spoon
  3. Sugar  – 3-4 table spoon
  4. Cardamom powder – 1/4 tsp
  5. Salt -a pinch
  6. Cashew nuts – 8 to 10
  7. Ghee/butter – 1 1/2 table spoon

For Sugar syrup :-

  1. Sugar – 1/4 cup
  2. Water – 1/3 cup
  3. Lemon juice – few drops
  4. Cardamom powder – a pinch
  5. Salt – a pinch

Direction :-


For filling :-

  1. In a bowl,mix egg,sugar,cardamom powder and salt using hand whisk or fork. Then add shredded coconut and mix well.
  2. Heat ghee/ butter in a pan, and put chopped cashew and saute untill light golden brown. Then pour in the egg-coconut mixture and keep on stirring untill egg get scrambled well. Switch off the flame and keep it aside.

For crepe and assembling :-

  1. In a bowl using hand mixer or in a food processor, mix egg, water, milk and melted butter well. The  add salt and flour. Make the batter without any lumps. Batter should be thin. Adjust the water/milk accordigly.
  2. Now heat a non stick pan (i used around 6 inch pan) and pour 2 1/2 to 3 table spoon of batter and make thin crepe.( Thinner the better).
  3. Now take the cooked crepe in a plate and put a spoon full of egg-coconut mixture towards the centre. Fold the crepe from both the sides – from left and right, then up and down. (To make a box shape as shown in pic).
  4. Now make another crepe and keep the mixture towards the centre, then keep the previously made box crepe – filled with egg mixture, by keeping the folded side facing downward. Then fold same way as previous box (ref the pic)
  5. Repeat the same process of step#4 and now you will get 3 layer panineer petti. Usually we make 3 to 4 layers. Here i made with 3 layers. You can repeat the process untill the size you prefer.
  6. You will get 2 paninner petti with 3 layers with this recipe.
  7. Repeat step 3,4 &5 to make one more panineer petti.

For Sugar syrup :-

  1. In a pan,take water,sugar and cardamom powder, bring to boil without stirring untill sugar melt completely. Now add lemon juice and pinch of salt and stirr and simmer for 4 to 5 minutes. Then switch off the flame. Strain the syrup and keep aside.

Serving style :-

  1. Keep each panineer petti in an individual serving plate, and put a deep cross towards the centre of the panineer petti. Now pour the sugar syrup on it as per your preference.
  2. You can also have panineer petti without sugar syrup.


Tips & Tricks :-

  • You can add raisins also to the filling. I personally dont prefere to add. If you are adding, add it after cashew get light golden brown and before pouring the egg mixture.
