Ingredients

Adjust Servings:
For Crepe :-
5 Table spoon All purpose flour
1 Egg
1/2 Cup Water
1/2 Cup Milk
2 Tea spoon Melted Butter
A pinch of salt
For filling :-
2 Egg
3 Table spoon Grated Coconut
3 to 4 Table spoon Sugar
1/4 Tea spoon Cardamom Powder
A pinch of Salt All purpose flour
8 to 10 Cashew Nuts
1 1/2 Table spoon Ghee (Clarified butter)
For Sugar syrup :-
1/4 Cup Sugar
1/3 Cup Water
Few Drops Lemon juice
A pinch of Cardamom Powder
A pinch of Salt

To prepare filling

  1. In a bowl,mix egg,sugar,cardamom powder and salt using hand whisk or fork. Then add shredded coconut and mix well.
  2. Heat ghee/ butter in a pan, and put chopped cashew and saute until light golden brown. Then pour in the egg-coconut mixture and keep on stirring until egg get scrambled well. Switch off the flame and keep it aside.

For making crepe and assembling :-

  1. In a bowl using hand mixer or in a food processor, mix egg, water, milk and melted butter well. The  add salt and flour. Make the batter without any lumps. Batter should be thin. Adjust the water/milk accordigly.
  2. Now heat a non stick pan (i used around 6 inch pan) and pour 2 1/2 to 3 table spoon of batter and make thin crepe.( Thinner the better).
  3. Now take the cooked crepe in a plate and put a spoon full of egg-coconut mixture towards the centre. Fold the crepe from both the sides – from left and right, then up and down. (To make a box shape as shown in pic).
  4. Now make another crepe and keep the mixture towards the centre, then keep the previously made box crepe – filled with egg mixture, by keeping the folded side facing downward. Then fold same way as previous box (ref the pic)
  5. Repeat the same process of step#4 and now you will get 3 layer panineer petti. Usually we make 3 to 4 layers. Here i made with 3 layers. You can repeat the process untill the size you prefer.
  6. You will get 2 paninner petti with 3 layers with this recipe.
  7. Repeat step 3,4 &5 to make one more panineer petti.

To make Sugar syrup :-

  1. In a pan,take water,sugar and cardamom powder, bring to boil without stirring untill sugar melt completely. Now add lemon juice and pinch of salt and stirr and simmer for 4 to 5 minutes. Then switch off the flame. Strain the syrup and keep aside.

Serving style :-

  1. Keep each panineer petti in an individual serving plate, and put a deep cross towards the centre of the panineer petti. Now pour the sugar syrup on it as per your preference.
  2. You can also have panineer petti without sugar syrup.

Tips & Tricks :-

  • You can add raisins also to the filling. I personally don’t prefer to add. If you are adding, add it after cashew get light golden brown and before pouring the egg mixture.
